There are a number of artificial courses popping up all over the US. Out west, there are river sections that have been changed in some towns to make rapids for people to practice in town, Reno, Boulder, and Bend for example. Back east, plenty of rivers and artificial courses are spread out from Oklahoma, Alabama, Maryland, and North Carolina. Of course natural rivers are out there too. Tons of course all over Europe, some in NZ and Aus too.
As far as man made facilities, not many. There are none on the west coast of the US. The Los Angeles planning committee considered building one for the 2028 Olympics, but decided to save money by having the canoe/kayak events at the Riversport course in Oklahoma City (over 1300 miles away from LA)

You realize those inflatable kayaks are only for the reporters that don't know what they're doing? The actual competitors will be using the same kayaks as the whitewater rafters.
Looks fun. I was dubious about ski cross in the winter Olympics but it quickly became my favourite!
I live in a river city, they do kayak cross at a local sports festival. lucky to have seen it in person

Climbing is in the Olympics. As are shooting and archery, which are very similar sports to hunting
