Beautiful dish! I read that it is not recommended to use sesame oil for frying because as it is already toasted, when heated it can become a little bitter, did this happen in this dish?

Is that toasted sesame oil or just sesame oil? It looks like toasted sesame oil, which is rarely used at the beginning.
