This made me cry… tears of sadness for myself and tears of happiness for you. Cooking is also my way of expressing love for my family. My mom passed away last year & my daughter left for uni last year as well. I worked very hard showing my love through my food by making food that is healthy & nourishing & that my kids would love as well. Sometimes I wonder if they understood my message and if it was all worth it. Now though, I’m trying to focus on nourishing myself and loving myself through the food I love and that makes me feel good & healthy.

For a moment I thought you were making Hutspot, a traditional dish from my hometown Leiden (The Netherlands). It’s mashed potatoes with carrot, onion and little pieces of bacon. We eat it every year on October 3rd which is like our local city Independence Day. Pretty cool to see the same ingredients made into something completely different, yet also nostalgic to you. 😊

I prefer to cook by myself majority of the time (that's where peace of mind comes in) But I also enjoy cooking with others, such as family and friends if we are gathering

My Mom taught me to cook and my dad taught me to fix things. They’re both gone now and I miss them every day but I feel like cooking my mom’s recipes and using my dad’s tools to fix things keeps them alive and passes a part of them on to my kids.

The filling of your croquettes actually is what we eat in my country as a main dish: hutspot, boiled potatoes mashed together with carrot and onion and eaten with fried bacon, smoked sausage or meat stew!
