I wouldn't make an issue of this where one does not exist. 1 could argue plants are polluted with pesticides deliberately sprayed so should those then be eaten? Also there was talk several years ago of some tomatoes as produced in the US by Monsanto et al, having been genetically modified to have fish genes to preserve their shelf life. This may not actually have taken off due to the public outcry in Europe; but it shows how things can be tampered with. Clean fish as per the dietary laws is ok to eat, in moderation like anything, such as water. Drinking too much water will give you water toxicity syndrome and damage your kidneys and can lead to death. Instead of worrying about things, that can't save you, one should focus in the relationship. Where the Bible and Ellen White diverge or seem at opposites, go with the Bible as that is the infallible final word of God and her interpretations are not infallible.
Read up about bioaccumulation. Fish consume plants or other fish and when we consume them we get both the toxins of the plant and the fish combined. Also, how is ellen white contradicting the bible? Is there a rule in the bible saying 'Thou shalt eat fish' for ellen white to be able to go against it? When God allowed meat to be eaten did that mean that he was simultaneously saying 'Thou shalt not be vegan?'. If not, then I see no contradiction but further enlightenment for our current time:-the time of the end.

We are told repeatedly in the Word not to partake of blood. But the modern slaughtering methods actually leave much of the blood in the meat, & it is being eaten without thought. In it can be conveyed the diseases of the animals (cancer). I once heard that animals being taken to slaughter, at some point realize it, & are fearful - adrenalin is released and that it remains in the meat and is part of why some insist that the lower passions are strengthened when the diet consists of these articles. Uric acid from the meat is also an issue in arthritis (gout) development and may be a factor in kidney disease, as well. Even when visible fat is removed from cuts of meat, much of it is still marbled within. We are forbidden to eat it. Boiling meat was the method God told the Israelites to use. AGE's (advanced glycation) is a result of preparing meat by frying, roasting, & grilling. And I've read there is actually more cholesterol in chicken than there is in beef, but the industry has propagandized us to believe the opposite. The best diet consists of God's plants, providing both raw enzymes and vitamins, minerals and strength/energy to those who use them judiciously. As you stated, temperance (moderation in that which is healthful & abstinence from that which is not) is an important factor in maintaining good health. We won't even fully go into the causes of poverty in the world, but we in the richer countries of the world are partly to blame because the demand for meat & dairy keep the cost of grain (for the poorer folk, me) high on the world market (cattle are mostly fed soybeans & oats, foods we could be eating/(growing on former cattle lands which are being ruined) & stay lower on the food chain). And the cesspools created from the slaughtering of animals have contributed as much or more to global warming than vehicle & industrial pollution. And those in the know tell us that the supply is not meeting the demand for such things as chicken nuggets & has created certain problems for that industry because ppl are not eating the whole chicken as they once did in the 50's (boiling it, not everyone turning to frying)...and atherosclerosis & heart disease and diabetes are attributed in large part to the use of animal products. You haven't finished the verse.... Unclean foods were never sanctified by God. Everything in creation was pronounced Good and Very Good, but does that do away with God's guidelines on what is to be eaten (clean) and not eaten (unclean)...SURELY NOT! To be sanctified by the Word means that God must freely allow it, but He definitely set boundaries of clean & unclean and our taste buds or preferences cannot undo His command.
