Anything can really be an extracurricular. one of the most important things you can do is start early, whether it be joining a club in school, starting your own project, or being a part of a program. I guess for finding opportunities it really is what you make of it. Honestly I found most of the stuff i did through simply google searches for opportunities for research and volunteering near me. I also talked to a lot of my friends about what they were doing to get ideas on what I should focus on. But yeah, most opportunities depend on how much time you dedicate to searching for them. In any case you can always start something yourself, but there are plenty of videos on that topic and since i didn't really do that idk if i'd be the best person to talk to about that.
I'm not sure how different my info would be for international students. Showing passion in your extracurriculars through longevity, community and career impact, and competition is a pretty ubiquitous topic from domestic to international.
