加明油是要增加菜品的亮度還有加味(所以有些師傅加的是蔥油或蒜油)。但是這位師傅用的油是炸魚的油。而且加的太多。這道菜油耗味肯定不會少。看他最後要舀料汁。已經都油水分離了

我的醬汁是薑末蒜末先爆香,香氣比較夠,再下蠔油,高湯,糖,滾後再酌量下個人口味量的鹽,再轉中小火慢慢加入適量芡汁,邊加邊攪拌避免結塊,濃度可以了再開大火,沿鍋邊加入黑醋和料酒和蔥花,因為黑醋不能久煮會沒味,蔥花久煮會顏色不豔,沿鍋邊放酒是為了有嗆鍋的香氣,最後攪拌均勻再淋在魚身上,以上跟前輩交流心得

正是他最嗜吃的鱔魚。
剛巧這一天閒來無事,
便想親自動手,
好好將這些朋友送來的鱔魚,
煮上一鍋清燉鱔魚湯來嚐嚐。
周豫將魚放入鍋中,
只見那些鱔魚仍自由自在地
在鍋子裡游著,
在鍋子底下用小火緩緩加熱,
水溫逐漸變高,
鱔魚在鍋中絲毫未覺水溫的變化,
慢慢地就會被煮熟了,
隨著那一鍋湯慢慢煮沸了,
周豫將鍋蓋掀起來看看,
卻發現了一個奇特的現象――
鍋中有一條鱔魚的身體
竟然向上弓起,
只留頭部跟尾巴
在煮沸的湯水之中。
這條身體弓起的鱔魚,
整個腹部都向上彎了起來,
露出在沸湯之外,
一直到牠死了,
身體猶然保持彎起的形狀
而不倒下。
周豫看到這種情形,
心中感到十分好奇,
便立刻將這條形狀奇特的
鱔魚撈出湯中,取了一把刀來,
將鱔魚彎起的腹部剖開來,
想要看個清楚,
牠究竟是為何需要
如此辛苦地將腹部彎起?
在剖開的鱔魚腹中,
周豫驚奇地發現,
那裡面竟藏著滿滿的魚卵,
數目之多,難以計算!
原來這條母鱔魚
為了保護肚子裡的眾多魚卵,
情願將自己的頭尾
浸入沸湯之中,直至死亡;
護子心切而將腹部彎起,
得以避開滾熱的湯水。
周豫看到這一幕,
呆呆地不知在原地站了多久,
淚水不自禁地潸潸流個不停,
尋思鱔魚猶捨命護子,
自己對母親,卻仍於孝道有虧;
周豫感慨之餘,
發誓終身不再吃鱔魚,
並對母親加倍地尊敬與孝順。
