Those are decent beans, but here’s the recipe to make: 1x white onion 4x garlic cloves 1x medium Jalapeño 24oz of Applewood smoked bacon 32oz chicken stock 32oz of pinto beans 2x bay leaves Cumin, salt and pepper to taste Cilantro is optional Diced tomatoes are optional Cook bacon first. Remove it once cooked drain any excess oil and then add onion, jalapeños and salt to draw out moisture. Cook 5min or so. Add garlic (if using diced tomatoes add now as well) cook for 2min. Add chicken stock and pinto beans. Add remaining ingredients (cumin, pepper, bay leaves, cooked bacon back in and more salt if needed). Simmer for minimum 30min.
Cranked out this recipe for supper tonight and it was absolutely incredible. The salsa verde is just fire. Had to swap the Poblanos for Cubanels, made it just a bit less hot. I got a great Boston cut steak from my local butcher and Man was it ever good. Made the hole fam happy. Thanks Matty ✌

Use STOCK for stand alone beans. I use bone marrow stock, that I get the tallow out of in a big oval crock pot. After cooling & skimming tallow/ fat, just throw in soaked beans. I've used some of the water after beans are cooked; and before they're cooled down, for rice. Best ever.
SoCal has been getting Carne Asada right forever . Lived in San Diego in the late 80's and the stands were everywhere and open 24/7 . Could get an arm sized burrito that was just meat and quac. No beans, no rice. Moved back to Washington state and it's been very rare to find joints that get it right .
Before anyone talks crap about Matty's tacos not being authentic Mexican tacos. These are actually extremely close to authentic tacos you will find in Sonora Mexico. He got it down to the T. All he was missing was the homemade flour tortillas.

Just one thing to keep in mind If you dont like skirt steak use whatever cut you like. It's more expensive but I love to get a nice rib eye and cook it the way I want and make some tacos out of it . Always worth it
I had these today for lunch A guy will work with brought us to a Mexican deli today. Came with 2 home made corn tortillas with each the meat some Guacamole green tomato Cilantro lemon and green chili salsa that's it so efing good 👍🏼. 3 for 10$.
