In the US, we almost always combine pumpkin with the spices cinnamon, ginger, cloves, and nutmeg (like in pumpkin pie, pumpkin bread, pumpkin ice cream). We're so used to this flavor combination that we'll even call something with those spices "pumpkin flavored" even if it has no pumpkin at all in it. Like the famous pumpkin spice latte from Starbucks.
Of course, we do also have savory pumpkin dishes, but that's less common here. Usually what I've seen is a pureed pumpkin soup, made with onions, celery, carrots, chicken broth, and maybe a bit of cream. People also roast chunks of pumpkin in a savory preparation.
Most of what Wild Girl has made in this video is completely outside of my experience, but it all looks interesting!
Every video I have watched of young women cooking i have noticed many things they do every single time. They always pick fresh ingredients from the fields that will be used, and not more than is needed. Once harvested they bring it right to the cleaning station and start cleaning it no matter what it is, produce, meat from the butcher, sea food, everything is washed. They cook by eye not measuring spoons/cups which for some people is difficult, I do not use them cause i use to work in a kitchen part time while on active duty military so after a time you just know by eye and taste. These young ladies at their age doing what chef's can do i n 5 star eateries is just spectacular, and all they are doing is feeding the family. Keep it up girls your doing great.

I watch a lot of video's of Chinese Women preparing meals for the family, it is truly amazing the work they put into gathering all the supplies FRESH from the fields, local waters or butcher. Then just prepare so many different dishes ( i have seen 6 to 8 at times) for one meal no matter how many people are in the family. Just mind blowing the dishes they can prepare and feed the family with is a blessing.
