From what i can see, there is cassia bark(cinnamon), several bay leaves, star anise, tsaoko\amomum(black cardamom), and I think fennel seeds. The other bowl has green Sichuan peppercorns. I have learned a lot from all these videos! Many recipes go more by weights and the number of people eating. I think that is why we don't see what we would think of as a recipe. I have tried to come close to many of these recipes and if I don't know, I wing it and it really turns out delicious. The more you watch the better you will get at guessing things.
