Hi! I didn't have to include any documents from the police with my application, but for the interview, everyone has to bring their criminal record document(even if you don't have any record.) People might have to include some document with the initial application if they have a record (I am not sure.) You don't have to send the original birth certificate or naturalization paper. These are very important papers you have to keep, so just a copy is fine!

If I were you I would include the original communication record in Spanish and add translation ver. Probably the same for the letter of intent. Original and translated ver. You can translate it by yourself and sign your name as a translator.

How do I share my photos, text messages, etc. of me and my fiance? Attach with the I-29F? Do I just show the interviewer my phone and let him or hee scroll through it during the appointment? We have sooo many screenshots together and text messages. So confusing.
You create a packet of the in-person meeting. That will be included in your first application packet. You can include things like pictures, screenshots of text messages, and flight tickets. You don't have to include every single screenshot. Just submit enough to show them your ongoing relationship. During the interview, the interviewer has all the documents you have submitted so far so they will look at those as they ask you questions.

If you have multiple passports that you have used to enter the U.S, they wanna see all the records with all the passports you have owned. This is not a part of a proof of in-person meeting, and that is why they want to see the record.

I am not 100% sure but I don't think it is mandatory. It will be good if your petitioner can include his driver's license or any identification he has. You can also explain that you are including the substitute identification since he does not own a passport.
