    I like that tip about moving the pot to push the foam to the side. Great video, too. I like that this and other food tube videos demonstrate a concept rather than a strict recipe. It teaches fundamentals so people can really understand and expand upon the technique rather than just being able to follow directions. You're doing a service to the global community.

      To remove the frothy scum that boils up, I use a slice of bread and mop it up.
      My 2 dogs go bananas... as they know it is coming their way....!!!

    After 30 years living in France I just used yesterday for my Christmas Day meal for the 1st time this incredibly delicious gravy ! OMG we all loved it made such a difference. I’ve only just started watching Jamie’s videos which always brings a smile to my face.     I use ground almonds instead of flour as a thickener.
    Adds a bit more flavour and you wont get the glooping or the powdery taste of flour if you add too much of it.
    Ground pecans also a treat.

    Wonderful video! Similarly, I roast my turkey on a layer of peeled, halved onions, chunked carrots and some celery too, with various herbs and such. The bacon I put on top of the turkey - removing it for the final browning of the birdie. The thing I do that we enjoy, is after roasting and removing the turkey from the pan I carefully separate out the onion halves and carrot pieces (that were deliciously cooked in those turkey juices) and save them to arrange around the roasted turkey. Sometimes I brown them up a bit more under the broiler first. It makes a nice presentation, and they taste so very good! Many thanks for your program from an old Mom in Canada :-)

    Additional tip: right before serving, melt a nice piece of butter in it, to make your gravy silky and shiny !

    I've always been intimidated with the gravy and get really stressed. I followed the basics of this gravy method and it was the easiest & best gravy I ever made! The trivet of veggies was amazing advice!

    We stuff our turkey w/onion, carrots, celery tops and rosemary sprigs. The cooking juices marinade that and drip into the same pan while the turkey is cooking. We simmer the neck & gizzards on the stovetop a long time w/mirapoix then add the strained liquid to the strained, degreased pan drippings. Same flavors. Tomato paste, S&P, spices like poultry seasoning and rosemary /thyme - but nothing like wine, Worcestershire etc.

    We use dried prunes in our turkey as it gives a somewhat sweet and deep sense of flavour to the sauce. Always a Win with friends and family.

      +dancerinmymind Awesome gravy is certainly a really important part, but I also think that a decent roast potato can make or break it too.
      If I didn't have crispy spuds, with really nice fluffy insides then it wouldn't be the same.
      The spuds soaking up the gravy and that mixing together, along with the crispy contrast! Yum!!!!!
      I love the whole thing though, meat, stuffing, some kind of mash (love Carrot and Swede, with a little potato for body), the gravy, roasted veggies, hell even some really nicely prepared sprouts, with bacon, broccoli and sweetcorn.
      Chuck some beautiful crispy Yorkshire Puds and that's pure perfection in my eyes.
      Can't wait for my Xmas Dinner!!!!

    we're having beef this year so i took inspiration from your chill con Jamie. once i've made the gravy i added a cup of fresh coffee (not instant!) and half a bar of 85% dark chocolate!! ta daaa MOCHA GRAVY!! its meaty, deep, with a hint of coffee and chocolate that goes so well with beef. its amazing!!

    :-D Got myself a lovely gravy for my roast pork. Thanks! It is really a keeper.
    Caution: First time I tried this, I used beets among the root vegetables. It taste great, but you get a pink-colured brownish sauce! lol Also, I would not recommend using too many carrots an especially not beets AND carrots. They both give a sweet flavour and it easily ends up too sweet.

      DarkAxi0m Could be but I doubt it. When cooking almost anything in an oven it is important that the heat can get to the meat evenly. I could be wrong but I think this is especially true when cooking large birds.

    I am surprised he didn't mention tomato paste instead of the jam. Just use a good wine and tomato paste for dark gravies, works like a charm.

    For my Turkey, I use ONLY two spices and ONE herb.
    For my stuffing, I do the "Simon and Garfunkel" thing.
    For my gravy, I use those "handy packets" and mix them in with an ever-growing white sauce.
    That's IT!

    I am now on a mission to find quince jelly!! I can't imagine how awesome that was..and I wont throw out the giblets like I usually do..

      You can use bramble, black currant, red currant, many options. Quince is pretty hard to find and can be substituted with apples and lemon juice.

    what can you substitute quince jelly with? we don't have that in the U.S.

    I wonder what pureeing the veggies from the roasting tray and adding those into the gravy would do.

      yum! that's what I was thinking. Forget the flour, puree some veg.

      +Chelsea M. We haven't tried it ourselves but give it a go! Make sure you take off the onion skin before you do this though.

    Can someone tell me what he put in the gravy at 0:30.
    I got carrots, onions and rosmarin. But I dont know the rest.

      +TobiX giblets so turkey neck, probably the heart and liver too

      wtrw001 from what I know, the turkey shouldn't be pipping hot but it's not cold either. Either way, the hot gravy is what's going to heat the dish

    Good tip on the deep snug roasting tray! I'm going to give this a try. The gravy is so important.
    I wonder if you could use cranberry sauce instead of the jam?
