    I use the Fill-up method and brew to the double dots. I use I little bt of a lower than course grind and my coffee is done in like 1 minute. Is this normal? It feels like my water is running too fast through the grounds because it dumps through my ground when I start to brew it? I can go less course but i feel like that will make it bitter.

      Definitely sounds like a grind issue. We suggest making the grind slightly finer with each brew until you find that sweet spot. :)

      Definitely could be grind size.... but, despite Fellow's fill up instructions, Grace's method here works much better in my opinion. I've had an XF almost 2 years & have tried several methods. Happy brewing!!

      @@caffeinatedcreative5018 Hello! I don't follow Fellow's fill up instructions. I also don't time it to answer your question directly But i treat it like any pourover i do - which for me just means filling as i feel like while the water goes down. My morning routine like heating milk, etc has more to do with my timing of filling. I have not found for any pourover method that specific timing or staging of pouring water makes a big difference to me in taste. And taste is most important to me. My experience is that proper grind size is more important factor....

    can you please type down the amount of water for each pour you're doing? thanks

      Pouring at 75ml-100ml intervals until you reach 360mL is a good starting point. Be sure to watch the water level in the coffee bed to make sure your bed isn't too high or so low that it's passing through the grinds too quickly!

    What setting are you using on your grinder? 19 or 20? I have the same grinder.

      I was grinding at 20 but it's likely our settings are a little off from one another due to the amount of use. I always suggest starting coarser and slowly moving finer until you find that sweet spot :)

    How would you describe the type of coffee you get from the stagg as compared to a chemex?

      Both are delicious! But what's great about the Stagg is that it's a little less effort, but still a whole lot of flavor. ;)
