  • 블루베리를 오래 드시기위해 냉동실에 얼리거나 잼으로 만들어 두기보다
    식초에 재워 두었다 식초로 쓰면 좋습니다
    식초를 뺀 과육은 건조해 정과로 만들거나 올리고당에 재워 두면 실온에 두어도 부패하지 않아요
    디저트나 요리 음료등 다양한 음식여 활용도가 높아 적은양으로도 많은 효과를 낼수있는 방법입니다

    현미식초 2리터
    (블루베리절임)
    꾸덕하게 말린블루베리 2kg
    프락토올리고당 600그램
    (Blueberry vinegar)
    2kg of blueberries
    2 liters of brown rice vinegar

    블루베리식초 넘간단하네요~전며칠전 쌀조청만들었어요~설탕1도안넣고요조청은 포도당+포도당으로 되어있어..설탕보다 덜해로운거같아요.설탕은 포도당+과당이라...과당이간에 축적될수있다고해서...조청은 아밀라아제라는소화효소도 들어있어좋은거같아요.😊

    요즘은 마트에서 사계절 내내 블루베리를 판매 하니 먹고 싶을 때 사 먹는데
    갑자기 예전엔 이런 제철 음식을 어떻게 보관 해 먹었을까? 하는 궁금증으로 검색해서 보게되었습니다

      저도 늘 옛날에는 어떻게 저장을 했을까를 생각하고 있어요.
      일부러 불편함을 당연한 일상으로 살아보려 배달도 안되는 곳에 자리를 잡고 있습니다.
      에어컨없이 몇년을 지내다보니
      그나마 그것도 없이 살수 있겠다 싶어서요.
      몸은 고단해도 마음은 편한것 같아요^^
      비운다는건 결코 비워지는게 아니라는걸 깨달아가고 있습니다.

    깨끗이 씻어 물기 빼고 설탕에 버무려 냉동시켜 두고 갈아서 드셔도 좋고 더울때 한개씩 먹어도 시원달콤해요

      포도는 즙이 많은 재료라 천연식초로 만들기 정말 쉽습니다
      씻어 물기를 제거한 포도는 주물러준다음 설탕을 1%정도만 넣고 천을 덮어 두기만하면 시간이 만들어줍니다
      중간에 포도주로 드시고 그냥 두면 자연적으로 식초가 되는 좋은 과일입니다^^

      다목적 건조기에요
      일반 가정용보다 많이 큽니다
      50×70정도 되는 채반이 7개정도 들어가는 용량이에요
      다목적 건조기로 알아보시면 됩니다
      대식구가 아니면 불필요할수 있으니 잘 알아보고 구매하시길요^^

      그러면 진한 식초로 드실수 있어요
      보통 식초를 3배정도 쓰는걸로 알고 있습니다
      저는 진한게 좋아서요^^
      설탕은 0.1%정도 사용하는데
      저는 재료를 봐가며 사용하고 있습니다
      조만간 토마토식초도 영상 올려드릴께요^^

      냉동블루베리는 포장전 씻는 과정을 거쳐야 유통을 할수 있습니다.
      씻지않고 사용하셔도 됩니다.
      생과는 유기농이든 일반재배든
      꼭 세척해 드십시요^^
      지금영상을 올린 이유는
      예전 냉장 시설이 없을때
      상온에서 블루버리를 먹을수 있는 방법입니다^^

    현미 식초는 :직접 만드신 거예요? 저는 건조기 없는 햇빛 바람 말리기인데. 거르지 않고 두면 그냥 탁한 식초 되나요? 믿을만한 자연 숙성 식초 필요하네요. 건강한 여름과 맛난 피자 화이팅!

      천연식초는 잘 만드시는 지인분께서 만들어 둔걸 사서 쓰고 있습니다
      시판 현미식초와 거의 반반으로 사용하는 편입니다
      천연식초가격이 ~~ㅠㅠ
      꼭 걸러내지 않으셔도 됩니다
      샐러드를 많이 먹는편이라 걸러 활용하고 있습니다^^

      아로니아는 방법을 조금 달리하시는게 좋을것 같습니다
      먼저 식초로 만드신다면 아로니아 무게의 0.1%의 설탕을 넣으시는게 좋습니다.
      그리고 동량의 식초를 부어 우려내는데 시일을 몇개월 잡으셔야 합니다
      그리고 건져낸 과육은 블루베리처럼 사용할수 없습니다
      말려 미세한 분말로 만들어 쓰셔야 합니다
      제가 아는바로는 여기까지입니다

      보통 가정에서 블루베리를 냉동해두고 드시는데 다른 음식냄새와 섞여 개인적으로는 냉동을 하지 않습니다.
      전문가분들의 영양학적 정답을 부정하는건 아니지만 개인적 입맛과 상황에 맞게 먹는 방법중 하나입니다.
      모든 방법중의 마지막 선택은 본인입니다^^
      개인적 의견을 하나더 말씀드리자면~~
      냉장고 있는 시대에 태어나 냉동 냉장이라는 보관법을 선택 받았을 뿐 없는 시대에 산다면 어떻게 상하지 않고 보관해 먹는가도 생각하며 살고 있습니다.
      그리고 수없이 많은 식재료를 적당하게 이용하고 있는 시대에 살고 있어 감사하지만
      옛날처럼 사먹을수 없다면 어떻게할까도 생각하고 있습니다.
      그래서 사계절 실온보관하고 먹는 방법에 대해 많은 생각을 하는 사람일뿐입니다.

    현대인은 귀찬은것은 노다 궂이 번거롭게. 그냥 얼려서 먹어면 황산화물질 나와서 좋다는데 두번세척하여 물기빼고. 키친타홀닦아 팩에나누어담아. 얼리면됨

      생과와 냉동상태의 수분은 다릅니다
      만약 냉동상태로 식초를 부어두면 곰팡이가 생길 가능성이 있어 냉장고에 두어야 합니다
      냉장고가 여유있다면 그렇게 하셔도 괜찮습니다^^

      냉동은 녹인다음 건조기나 선풍기바람등을 이용해 최대한 수분을
      제거해야합니다
      그런다음 식초에 우려내고
      다시 꾸덕하게 한다음 올리고당에 재워두면 됩니다
      수분은 모든 부패의 원인입니다
      수분제거만 잘 해주시면 가능합니다^^

      옛날 냉장고 없던 시절에 산다면 제철 농산물을 어떻게 저장하고 먹으면 좋을까를 생각해 봅니다
      오히려 실온에 두고 변질되지 않도록 하는 방법이 있다면 몸에 더 좋을거라는 생각을 합니다
