He said for one glass of milk 1.5 tbsp Sugar and half spoon arrowroot/corn flour. Boil it, then cool it and keep it in freezer, and in between take and beat in mixer and keep in freezer. Atleast 5 times this process has to be done (in almost 10 hours I guess) Then you can enjoy the ice cream!! 😊
@@choiceonwheels I have tried using a beater works better than mixie. Just 2 times is enough to get a good creamy texture. Some people add palm oil to increase fat but that's unhealthy (this is called as Frozen dessert which in NOT actually an ICE CREAM) . So next time you see it as FROZEN DESSERT just don't buy it. Unfortunately, there is FSSAI approval for it!!!
Curdling of milk is caused by a process called coagulation, which occurs when proteins, primarily casein, in the milk react to an acidic substance and start clumping together. The reaction is temperature-dependent and is more likely to happen at higher temperatures. When milk is cold, the proteins are more stable and less likely to react with the acid. They're also more evenly distributed throughout the milk, making it more difficult for them to cluster together and form curdles. At lower temperatures, there's less kinetic energy to fuel the reaction, which slows it down or prevents it from happening altogether. However, this doesn't mean that milk can't curdle in a cold state - it can, but the process will take a much longer time compared to when the milk is warm or hot. So if you're trying to prevent milk from curdling when you add acid (from sour fruits), it helps to cool the milk first. But if the acid concentration is very high or the milk is left in the acidic environment for a long time, it may still curdle even if it's cold. Please note that factors other than temperature and acidity (such as the age of the milk, its fat content, and the presence of certain salts or enzymes) can also influence whether and how quickly milk curdles.

The only doubt I have is why does the milk do not curdle after adding mango pulp?

Curdling of milk is caused by a process called coagulation, which occurs when proteins, primarily casein, in the milk react to an acidic substance and start clumping together. The reaction is temperature-dependent and is more likely to happen at higher temperatures.
