Liberian Red Oil Cassava Leaf///prepared by my husband

- ingredients:
One pack of frozen cassava leaf
meat (any kind of meat you prefer) he had turkey (neck and wing) fish, crab, chicken feet, snail
onion
red palm oil
chicken flavor bouillon
black pepper
Maggie cubes
dry chilli crush pepper
First he seasoned the meat using all the season I mention. Added onion and let everything steam for a few minutes before adding water to allow the meat to cook.
While the meat cook he added his cassava leaf to the blender and added three big scoop of peautnut butter. He than used some of the water from the boiling meat to the blender (you could use regular water if you like) before blending till the cassava leaf was very smooth
once he was done blending he added the cassava leaf to his half cooked meat, added a little bit more season and water before covering and allowing everything to cook together till all the water dries
after 20 minutes of cooking he added his fish. (If your not using fish just allow your soup to continue cooking
once most of the water has dried he added his red palm oil. After adding his oil he allowed the cassava leaf to cook on low for a few more minutes before turing off the stove.
Hands down one of my favorite Liberian meals. ❤️

Caleb Allen - I’m black American from NC and lived in Liberia for two years working for US govt and cassava leaf was my favorite dish. I would order if from Evelyns restaurant (asking them to leave out the beef and cow foot). The combination of cassava leaf, fish and vegetables and seasonings with the palm oil is hard to describe but so so delicious. I also loved the beans torborgee dish and fried potato greens too. Just go to your local African market if you have one and order the ingredients and try it at home. Watch different recipe preparations and copy them but really you can’t mess it up.

Yes you can just blend the cassava leaf very well. Till it's super smooth
Not trying to be funny or anything. But did u two grown up in the states bc both yall sound real good in English. My in laws just moved here 3 years ago and i know it's still new but they still sound like they just got here but it's getting better day by day. But u two sound really really good.

You have to cook your cassava leaf for at least one to two hours before it’s completely cooked
