    Damn brother that looks good. My 700 will be here Monday next week and I cant wait to try this. Just like you, I'm older, and tired'r as well, so moving on to pellet smoker from stick.     Fat cap up or down??

      I've always cooked with fat cap up for over 30 years. I've recently in the last year or two started to trim the fat cap off to creat a bigger bark all around and I really like it better. Pork still stays plenty juicy!

      Steelbook .Collector 99 I’ve owned many cookers over 30 years. Nothing beats my stick burner for taste, but the Rec Tec is a close second and very easy. I’m older now and enjoy sleeping all night on long cooks 😉😂

      Steelbook .Collector 99 I have a Shirley Fabrication Vertical Smoker with Santa Maria. I’ve got several videos on the channel showing her. Use to have a 30x70 when I was catering more. SF makes some of the best smokers out there! We have two playlist on our channel and the smokers are under “food” videos.

      Where did you get that thermometer for keeping track of your temp and comparing temps? I might get me one. Looks really useful. I just ordered my rec Tec I'm on board

    How is the smoke flavor vs other cookers you have tried?

      Believe it or not.......pretty good. I believe the extreme smoke and lower temps allow the meat to soak in more “smoke” flavor. Is it as “Smokey” as my stick burner or Santa Maria........no.....but is has impressed me with flavor profile so far. Killer burgers!!

    Looking Great Mike!! How was the smoke flavor in the meat, was it as good as the smokey flavor of the Shirley? I have tasted several butts that were cooked on a pellet smoker, but just did not have the flavor that I like and get from a stick burner.

      Grady L. Evans it was NOT as Smokey as a stick burner. It was very good though. May be one of the better barks I’ve ever had. The bark was so good.....we kept it all and chopped up in the pulled pork.
      Nothing can touch the taste of a stick burner. This is my lazy way of getting sleep when cooking for family.

    Hey there LFL. I'm sure you discovered it already but the Extreme Smoke mode is 180 degrees. It also automatically adjusts your auger feed to the lowest setting so you don't feed in too many pellets. At other low temps above the ES mode I find that I need to manually lower the auger speed so ES mode works real well. I used this item to seal the grill lid and it works fantastic.       Robert M glad you responded. I’ve actually thought about sealing myself. Every smoker I’ve owned has always had a seal strip....Kamado, two stick burners......this is the first one without seal. I think I’m going to take your advice. Some say the owners or company say it creates issues.....never heard anything such as that and I’ve smoked meat for over 30 years. Thank you for checking out and the tip!

    Review your burn in video....the actual temp was always within a degree or two..it was probe a actual temp that was20-23 degrees higher than the maverick....you aren’t using rentec probe...so that problem probably still exists
