It always amazed me that no matter how rusted a piece of metal is (unless it just falls apart) you can always grind away the outer layers to make the inside shine.

I do think it looks better when brass is used for the hilt and butt of the handle than the entire handle. You got a gorgeous finish on the knife, but it isn’t a butcher's knife. Even without your handle it would look more at home with a warrior than a butcher. Well done.
Zenmaster Butcher or slaughter? The reason I said it isn’t a butchers knife is although the tip is the right shape for nicking fat etc it will be hard to use it flat to the board. The western butcher's knife doesn’t have the bit where the blade rises.

I really like that, perhaps the handle could have been a little less blocky and a bit more slender but you did a marvellous job on the blade, it reminds me of a kukri

He uses a thin hot wire to cut the form out of Styrofoam so that when he pours the brass it just burns off as the brass flows into his mold.
