    3 cups AP flour
    2 sticks cubed chilled butter
    1 cup ice water
    1 tbs sugar
    1 tsp salt
I come back here every now and then for the ingredient amounts because I only remember 3-2-1 but never of which haha

You have the best pie crust presentation I've seen. You present this in a very friendly, basic instructional manner not leaving anything out. Now I realize I don't need to add an egg cause you turn the dough over several times as one would biscuits to make flaky. I'm so glad you keep this on utube and your website. Thank you very much!

My wife and I are attempting home made pie for the 1st time, as store bought is either sub-par or if is quality it is very expensive. The ingredients for 3 pies can be bought for the price of one quality pie.

Cristina I want to thank you for sharing this recipe. I come from a long line of great bakers...moms, grandmas, aunts. I have seen many of their recipes, but I had troubles getting results as those old recipes seem to be missing the method. I LOVE your approach as I have a Kitchenaid mixer and I got real excited to think that I could use mine to make pastry. I got it mastered on the second try, and now I don't have to be intimidated by making pasty. In fact, I think you make it so simple that anyone could try it and get confidence from the results. I look forward to making more pies! Ellie =)

Cristina, thanks for sharing your pie crust. I make a fair amount of pies and also use butter. I always do it by hand, never a mixer. I have big hands as well. One thing I do to the recipe is that I add a small amount of canola or corn oil to the ice water before adding to dry mixture. The oil helps to reduce the gluten and makes the dough more workable when chilled. Butter gets hard when cold. I love the layers and flakes your pie crust has. Your pie presentation is right on. Fantastic!
Cristina's pie crust recipe is 3-2-1 or:
    3 cups all-purpose flour
2 sticks of unsalted-butter or 1 cup of butter (8 oz)
    1 cup ice-cold water
    1 tablespoon sugar
    1 teaspoon salt

Thank you for this! I have watched a lot of pie crust videos and this is by far the best. Usually the videos (and recipes) show far less water than this one, which has never worked for me --the dough was always too dry and I thought I was doing something wrong. Other recipes and videos also mix the dry ingredients much more. What you show makes more sense, and you explained that and the other aspects of the recipe extremely well. I had almost given up making pie crust, but now I'm eager to try it again.

I made this twice, on the first time i added too much water so it was sticky, but the proportions and especially her technique about rolling the dough that i have never seen on any recipe on TH-cam made it come out tender and flaky still, second time was even better, soft even layers with even, i could even see the space between the layers when i break it. It's foolproof!

I love Christina's videos! She does such a great job explaining the science or the "why" behind what she's doing.

Hi. Women can learn so much about cooking from their mothers growing up but as a guy when I started trying to cook later on I'm sure I made my own bad habits. Watching this video will fix your bad habits. I've followed cookbooks and done ok but this is such a good looking dough. When I first started out, I had dough sticking to the countertop and never could pick it up. I think I better follow this video from now on and retrain myself. So professional.

Interesting. Well done. Most other recipes I've looked at and tried used 2 1/2 cups flour and half the water (more water for more flour, but the proportions are very different). Now I know how the layered flakiness is done. Just learned an important method today. I've been over processing my dough!

Jordan Vineyard & Winery Thanks! Just wanted to add that I froze several batches of the pie dough for more pies. Just as good when thawed out too! No rips or anything, just perfect every time.

My mother always used lard, and mixed and kneaded the pastry dough by hand. It was the old tried and true method she learned from her mother on the farm many, many years ago before modern mixers or food processors were around. I just tried recently to make pies myself using her recipe. First try came out good but 2nd time the crust was a little tough. Glad I found this as I have a KitchenAid stand mixer and will try it next time and use butter instead of lard. Thanks. Great tutorial.

This is an outstanding tutorial that is professionally done! Thank you for speaking to the variables - flour types, fat types and explaining the advantages and disadvantages of each. This seems like the kind of class that would be fee based at one of the culinary institutes. Thank you so much.

Oh my God thank you so much for making this video. I've just gone through three different tutorials, three different pie crusts, and ended up crying at the end of them because they all fell apart. I went off of your recipe and everything turned out perfect THANK YOU!
