@@dennleavy4407 They had an interesting group of chefs making videos until one of them publicly accused Bon Appetit of being racist. They stopped making videos for a while then came back with a bunch of diversity hires to try and prove they aren't racist which ruined the whole thing.

As a Jersey girl raised on pork roll, I usually describe it as a better version of spam (vs bacon because the texture is much closer). But I’m thrilled to see it featured here! Best breakfast meat there is!

When I was a kid in the mid 70's and onward I made this same sandwich with fried bologna. Frying bologna to a crispy texture is a BEAUTIFUL THING. I stacked the samich high with lots of yellow mustard, to die for.
You can get the meat at Giant and Food Lion. The THB bagel shop chain offers it as a breakfast sandwich (pales in comparison to one from Jersey though). I am from NJ but live in MD and it sucks that it's so hard to find but there are options.
Omelettes/fritattas with unexpected leftovers. Our big fave is a slice of leftover supreme pizza diced. Heat some oil in a skillet, throw in the dice to brown for 2 minutes, pour in 6 beaten eggs, put 2 or 3 slices provolone off to cover one side, then when nearly done, fold over the other side, and flip to cook another minute to finish. Good with remnants of meat/tomato sauce/pasta with sauces, too.
Awesome video as usual Brad! I will say I got excited at the mention of “Leone and sons pork roll” but my excitement went cold when I saw the price for a 20 oz package was $65! I guess you get what you pay for, I’ll stick with the Taylor brand 😂 keep on keepin on brother!

Pork roll/Taylor Ham is great. If you can't get your hands on it but still want to know what it tastes like, get yourself some Salami and chuck it in the microwave until it crisps up. It's not a perfect replica but it's pretty damn close. I only know this because what I nostalgically call crispy salami is something I grew up with and was a beautiful accident by my Grandfather. He was a former NJ native who moved to Ohio and he swore it was the only way to get his fix.
We need to have a little conversation about how unfortunate it is that Dukes mayonnaise is evidently not available in some places. Hellman's is the acceptable substitute in those sad locales, I will give it that.
There was some great interaction with the crew, it would be awesome if they were miked and we the audience could hear them responding to Brad's questions.
"I'm not mad at that" is an unexpected Brad holdover from Chris at BA. You can tell they got a lot of cross pollination which is also super obvious with Molly and Carla.
I wonder if that chef's knife he is using the the knife he made with Bob Kramer. I am still jealous that he had that experience. Kramer is a legend and having a chance to make a knife with him is so cool!
