as an italian i've been trying to perfect a vegan ragù (you would call it bolognese sauce) for a while! I will try it your way. Personally I've found that the combination of onion-celery-carrots plus herbs plus wine/balsamic vinegar is fundamental (and tomatoes obviously), but for the rest you can use your creativity! i would recommend a meaty vegetable like mushrooms or aubergines and a protein like tvp or lentils (not that great, might be worth it to try some fancy variety of lentils, like i've see others do). i also add walnuts which works great, i absolutely recommend it!
What did you do to the caramel after blending it to make it so much thicker, darker and smoother? I’ve been trying to work it since I first watched your video as mine doesn’t go like that?

So excited to try this recipe tomorrow! I am using wholewheat lasagne sheets however, will this take much longer to ensure that the sheets are cooked thoroughly? I am also wondering, how long would it take to reheat the entire dish of lasagne... 20 mins? I am making it one day in advance to ensure it is set. Thank you! Love your book also!

That lasagna looks amazing and I really wanna try making it - is the carrot and celery chopped rly finely or blended? I can't quite see from the video and don't want to mess up what looks like a great meal.

I'm torn what looks better, that lasagna or the breakfast plate. Both look divine.
Could you sub the mushrooms in the lasagne for something else or would this greatly impact the taste?
