      Here's a fun idea: A challenge where the normals have to each pick one dish from that cookbook and have to make both the original version and their interpretation of a modern one.
      With the added caveat that they can't just pick the simplest ones.

    I honestly like this style of format. There is a challenge, but doesn't feel like a timed challenge. During the mean time, it also feels like more of an educational video. I'd be happy to see more like this here and there

    Ben's role is usually as voice of reason, since he's the chef and has the most knowledge to share, but whenever he's on the hot seat and isn't obligated to host his chaotic "for content" side really shines

    Now, I have an idea. Take these recipes and "modernize" them. Make changes to make them more up to date but still stay with the idea and flavours of the dish. Would be interesting to see what you guys can come up with!

      The thing about the modern way of doing this, is that you would not do anything of the sort.
      The sauce would fly, but it's very complicated and maybe more steps than you really need.
      Duck basically already clashes with the concept of being light, as it's fat and dense.
      Thus this song and dance to try and un-duck the duck.
      To make it light, use some of these ingredients, but treat them way differently.
      Essentially assemble them into something like Peking Duck with pancakes.
      You do the sauce, probably with a way condensed process, and reduced down.
      Then you take the spinach and/or similar fresh veggies with thin slices of duck on pancakes.
      Drizzle the sauce on, done.
      Now it's light by virtue of being like 50% fresh veggies by volume and fluffy pancake. Very airy, fresh and full of that sauce. Also you can actually tell you are eating duck.

    I’m really enjoying the move back to tasting the food at the table. I get that Covid guidelines made the change necessary originally.     Out of all the historical dishes you’ve made in this series this one is the MOST 19th century yet.
    The texture of the duck makes sense given zephyr means ‘gentle wind’ and is associated with clouds/cotton/spring. As soon as you said the name of the dish I immediately guessed it would be a mousse!

    I’m a culinary student at le cordon Bleu Paris and am graduating September of this year. I have been watching for a couple of years and thought it would be a cool video to do 2-3 recipes from the 3 different level( basic , intermediate, superior) but they have a similar set up as culinary school practicals and see how the basics do as the recipes get harder.

    These videos are so much more enjoyable to watch when there is no timer, no competitiveness, just cooking with friends from an old book. This is fun. I've come to realise I really no longer like timed videos, especially as it's mostly artificial timers. Only the pass it on series is fun really because it's timed but co-op.

    When Ebbers said "Yes..." on the question as to whether ducks and chickens are the same, he looked at the camera like he knew that the next statement that most of the bones are the same just slightly different would upset *someone* in the comments.
    We all know that there's some expert in avian skeletal structure watching and s/he is *seething*.

    I like this kind of episodes a lot! There is no time pressure, but there is some pressure connected with the unknown. Recipes are a bit mysterious, vague, and I feel we can really learn something about culinary history and how the tastes change through centuries. Also, it seems to me that many recipes relied not on flavour combinations and good quality ingredients, but on technique, processing and very sophisticated ways of presenting the final dish. I think it's a great lesson for homecooks who try to have some variety in their dishes - not only good examples, but also what's not really worth the time and effort.
    Jamie and Ben made a great duo, with Jamie being the voice of reason here - and I like that Jamie insisted on sticking to the recipe even when Ben knew a better way of preparing something.
    I wonder what would be the result of a comparison of dishes, if you had 2 chefs cooking the same old recipe, with one sticking very strictly to the text (maybe with Jamie on the shoulder) and the second one doing roughly the recipe, changing whatever he or she thinks would work better (Barry would be an inspiration here :D)

    It would be fun to see how Ben would have cooked a contemporary version of the dish. Or make it a challenge, first you cook it together following the recipe and later against each other in their own version.

    Have you guys ever considered creating a book that follows along as one of the "Normals", so we can level up and get a similar experience to them. Or even for cooking episodes, leave some kind of how to in the notes so the "audience" can cook along if they want

    Seeing some vintage recipes be brought into reality in the image of a modern chef using modern techniques and interpretations makes me appreciate the change food has made over time because I don’t think there’s yet been a dish out of this book that I’ve liked the look of

    Watching Ben and Jamie work together here, it's very interesting to see how they measure things differently. Whereas Jamie is typically checking everything via scales and pitchers, Ben appears to simply read the recipe for a general idea and then eyeball it, stopping when he's there or to suit his taste. It could just be me, as someone who has no culinary expertise beyond following instructions on packaging. I might also miss some moments when he does weigh out ingredients. But I still find it impressive.

    Hey Sorted Team, the "normals" (for me they are mor like "assistant cooks")have so many badges for cooking/creating everything, wich is totally ok for me. BUT sometimes i have the feeling their use of knifes (especially wich knife for what occasion) could be a little bit better after that amount of time. So i think an episode of something like that would be very nice. Thanks for your attention
