While someone already mentioned the anime change, I would like to add that guildarts' design was based on gale glory, the father of Mashima's previous series mc, and that shanks had a more simple and goofy design at the time of guildarts' appearance.
The GOAT is here , really like Gildarts even though he his too strong to being too much present in the story arcs 😂😅 . Really like his bond with Natsu and like you say personally i see him more like an older brother for Natsu , or even an uncle . HEAVY SPOILER .... Now that i rewatch this episode i found so fucked up the Lisanna's phrase of seeing Gildarts and Natsu like father and son , knowing that Cana say that he was so loved by all the guild members that she was able to spent very little times with him (and because he was out for work most of the times) , like he spent most of his days with Natsu which is so sad for her 😭😊
And Gildarts is similar to Shanks because the authors of these two anime were good friends

Just for some information, gildarts had blonde hair according to the manga, but the anime wanted to be different, and made him look more like shanks
