    I have lived in Vietnam for the past 20+ years, five at village level. I have a large extended Vietnamese family. The rice cooker is on all day and rice is consumed with every meal. No one has obesity problems except for my sister in law. She went to university in Saigon and developed a taste for fast food. KFC, Pizzas, hamburgers French Fries etc and sugary drinks like Coke. The village folk drink a lot of sugarcane juice without any problem. It is my view that obesity here is caused by refined sugar, flour and so called vegetable oils. Just my observation.

      There is also almost no diabetes in Asian countries that eat rice daily. They also live longer. The ones that do not usually have no access to health care.

      That's because they use real natural rice. Here, rice has plastic in it and the food industry put other harmful additives in.

      Bingo, way too much fat and processed oils in our diets. Sugar only causes diabetes carried on the back of fats.

    That's what I do . . . Cook up a big batch of rice and eat small portions all week long as a side dish to my basic Mediterranean diet meals. It's more about portion control, eating healthy protein, and eating the rainbow of fruits and veggies. It's also about getting enough exercise. All of this to complete the picture of a healthy lifestyle. Don't just sit around eating even healthy food; if you do, you will pack on the pounds. Have healthy relationships with people, pets, etc., and be happy. This works for me, and it can work for anyone.

    Basmati rice is what I like and use..portion control is best and get in 35 - 45 minutes of exercise after eating. Movement is medicine.

    I eat cold rice occasionally. A delicious chilled salad can be made with mostly rice. The salad also contains onion, capsicum, green peas, beans and dressing

    After refrigerating rice, heat it up thoroughly, as it cools on your plate drizzle olive oil on it before eating. Get some exercise after eating your last meal of the day.

    I got a bigger refrigerator. After doing this, I have accidentally started including resistant starch by preparing batching of potatoes, rice, quinoa, etc. so that I have several days of these stored in my refrigerator.

    See asian people...esp. in the past...rice is their main food, overcoming meat, rice is becoming staple for commoner or poor people..and they are in good shape...

      Yeah. We asian eat rice everyday and rice is not the problem. The problem with diabetics is because asian like to drink sweet drinks everytime and everyday. That' s the only reason.

      It's not any different then with eating bread here in Europe or one of the many dishes made from flour.
      The big difference is, most people in former times firstly ate much less sugar and secondly did more hard physical labor.

      @@007Bedant Depends on what you mean with processed. Of course bread (or flour) is different then just cooked grain of any kind. But bread back then and quality bread even today is just the result of sourdough fermentation. Which makes it actually more nutritious and easier to digest. Its not the same as mass produced bread from the super market.

    How cool does it need to get because bread is cooked and then cooled as it sits on a shelf in the store wouldn't that make bread resistant starch?

      Great point!
      YES, bread is a type of resistant starch.
      What makes it more resistant to the digestion process is prolonged heat exposure when cooking,
      Then it’ll cool down to temperature room or even lower which makes it a type of resistant starch.

      I make my own sourdough bread, pre slice and freeze. Works out great for long time storage and doesn’t upset my belly.

    So if i have canned potatoes can i put the can in the fridge and reduce its starch effect? I usually eat potatoes and eggs in the morning, usually I use fresh potatoes.

      It’s all about cooling the starch after cooking and reheating it..
      as i read on the internet, canned potatoes are partially cooked so you need to cook them, then cool them down to transform the starch from digested into resistant starch

    I appreciate your video on rice very much! I am trying to limit is to one cup per meal with vegetables and animal protein. We all eat too many calories daily. They lie when they say to eat 2,000 plus calories daily! Finding my way. Asians are very thin as a general rule.

      That’s true, i did my bulking phase eating 2000-2200 calories a day..
      every person has their own basal metabolic rate, and every person burns a certain amount of calories a day either by working out, their job or even some daily habits.

      @@DrMauriceDakar I appreciate your response! I didn’t know that alot of people do the “rice diet” to lose weight. We all search for truth about nutrition. I am inclined to believe ancient Chinese and Japanese diets which include rice. They live longer than most of us on cooked vegetables, white rice and animal fish. Worth exploring. 😊 Thanks again!

    I, for one, Love the idea of Resistant Starch. I have a whole cookbook based on the premise - written by two of the skinniest ladies you've ever seen.

      Lol,... The Ladies being Skinny just means they can Metabolize the Sugary Starches,... You don't see Fat people in Thailand despite their very high Sugar diet,... Fat Westerners are Fat due to high Insulin from high Carb diets so they simply should NOT eat Starches at all

    I just watched a dude do a very detailed Resistant Starch test over a week with Basmati Rice,... Fresh cooked & topped with salt & butter, once reheated Resistant Starch Rice with butter & salt, Resistant Rice heated & cooled 5 times then topped with butter & salt & finally Cold Basmati Rice with nothing added,... He did so after reading the Johns Hopkins Article on Resistant Starch.
    Total FAIL lol,... Still saw big Sugar Spikes & the HIGHEST spike with a more than 40 point increase was the Cold plain rice & the Resistant Rice with Butter actually produced a lower & slower spike,... More importantly, he found all the Rice VERY inflammatory with significant joint pain.

      Our bodies can respond differently to different types of foods
      I shared what i’ve learned in college and tried with my father (type 2 diabetic) over the past 6 months with and without meds
      Maybe if i tried this method with someone else, it could’ve given different results
      For example Jordan Peterson swears by the Carnivore Diet which i can’t sustain for a long period of time due to the low carb intake
      It’s up to you and your lifestyle to choose your favorite diet as long as you can stick to it for a long period of time.

      I think your view that Carnivore can't be sustained is due to your College Education,... So many people have successfully been full Carnivore for 12, 15, 30 years,... Carbohydrates are simply NOT "essential".
      Even 7 year Carnivore Doctor Shawn Baker STILL talks about Fat & Calories like it matters because that is what he was taught in Medical School & once that stuff is burned in your brain at great financial cost, it's hard to shake it but you know that your entire blood supply has just a slightly heaped teaspoon of Sugar and that your body will make the little bit of Sugar it needs from Meat if needed,... Again, Fatty Acids, Amino Acids, Cholesterol, Protein are all ESSENTIAL for Life but Carbs are not :)
      Healthy people are different to Sick too though,... I can NOT metabolize Carbs well at all & should not have them,... Fruits & Starches cause me great discomfort, gas, bloating & high blood glucose with high blood Insulin to combat it,... I used to eat everything including all Vegetables & Nuts but the Greens & Nuts caused me to have Surgery to remove a 9mm Calcium Oxalate Stone from my Bladder so I don't eat Oxalates anymore.

      As i said before, I can’t sustain a low carb diet like Carnivore but many people can like Dr. Peterson
      I had a lot of patients who can’t tolerate different kinds of foods like eggs, high protein diets, high carb diets, etc..
      It’s up to your body’s ability to digest and absorb nutrients but that doesn’t make any type of diet “Unhealthy” or a “Myth”
      And i want to correct you on one thing,
      The main source of energy for your brain is carbohydrates, you need a minimum of 130g of protein a day for your brain to function properly (the more active you are the more energy you spend, the more energy you need)
      That doesn’t mean you need to eat 130g consistently
      Your brain can use the stored glycogen in your muscles and liver as a source of energy
      But you need to have a sufficient amount stored before depending on that, if these stores are depleted you need to eat about 300-500g of carbs just for 2-3 days max to refill your glycogen stores ( 500g in your skeletal muscles - 100g in your liver )

      I sincerely hope you test your patients Fasting Insulin along with Glucose because without know Insulin level, you only have half the info.
      I knew a very obes woman who's Doctor said she was NOT Diabetic because her A1c was at the high end of normal range but when I pushed her to get Fasting Insulin tested, it came back at 85 !

      It’s not about a certain food that makes you fat
      It’s about the amount
      If you eat an excessive amount of carbs, fat and protein you’ll get fat
      Resistant starch will help you in your journey but it’s not the ultimate solution

      as i said in the video, it's not just about the rice..
      it's about your overall calorie consumption
      if you're eating less rice or potato or whatever and feeling hungry, you're probably choosing to snack or eat something that's high in calories which results in weight gain
      in the end, whatever it is the way you feel like you can lose weight and keep it off (whether it's keto, calorie counting or cutting a certain type of food that you consume high amount of) just stick to it and give it some time.

      I’m going to reply to your comment with the same answer, the goal of this Video is to show that you can eat rice and lose weight
      You can actually eat rice without it being cooled down and you’ll still lose weight
      I lost 55 lbs eating rice, potato and even chocolate
      As long as your calorie intake is controlled and you’re hitting your daily protein goal you will lose weight.

      second thing is, i advise you to watch it again, you might have missed the point where i spoke about eating rice and losing weight at the same time being a possible thing through resistant starch method, and then saying that the main way to lose weight and keep it off is to have a balanced diet and not cutting any macro nutrient from your life.

      I’m sorry to tell you that there nothing called essential and Non essential macronutrients It’s up to you to include it or not
      You can do Keto, Carnivore, eat everything or eat nothing
      The science say that your brain needs around 130g of carbs / day to function properly, does that mean people who do keto or carnivore are going to die from brain damage? No. It’s also advised to drink 8 cups of water a day, there are a lot of people who don’t even get 3 cups a day, that doesn’t mean they’ll die out of hydration
      Your Diet is Your Choice, we have Scientific Research that we can read and use whatever we want from it, but there’s NOTHING called mandatory unless it’s a medical case.

      There are “Professors” who speak nonsense online and offline,

      Be open minded. Check research. Check Prof Tim Noakes MD who became diabetic despite running marathons. First do no harm. Carbohydrates causes oxidation in our body.

      There is Non essential macro nutrients. Our body can make sufficient glucose in our body through gluconeogenesis. Our body can maintain 4 grams of glucosd. Above this glucose creates oxidative stress. Be open minded before you harm people for recommending too much carbohydrates

      i said it's up to you to choose your diet and every diet works if it works for you, couldn't be more open minded lol.
      and also, my dad had the exact same experience as prof tim, but we have a family history in diabetes so it's always expected to happen.
      at the end i want to say, i think you missed the idea of this video my friend. i'm speaking about resistant starch and how i used it to lose weight and my dad used it to lower his blood sugar spike. so please "Be open minded" and if you don't like the video you can easily skip it and save yourself some time.
