Hi Messelina, when cooking fried rice especially using easy cook rice the key is to cook the grains soft but they must still hold their shape. Therefore, we test a few grains between the thumb and index finger to ensure that the grains are soft enough to chew but not too soft to make the rice sticky. The heat within the rice will also continue to cook it further, so it’s a good idea to rinse it with a bit of cold water after straining to stop the cooking process. Hope this helps.
