Remake of Spaghetti with sauce of slightly boiled garlic, oil and chili pepper sauce by Carlo Gaiano

    Ingredients for 2 people:
    160-200 gr. spaghetti
    2-3 large cloves of garlic.
    1 bunch of parsley
    1 fresh chili pepper
    A few tablespoons of extra virgin olive oil (evo)
    salt
    black pepper
    Pour a drizzle of oil into the pan
    make a few slices of chili pepper, quantity to your taste.
    chop the parsley with a knife
    clean the garlic, also removing the internal bud
    lower the garlic in the boiling water of the pasta,
    leave it for only 5 minutes and take it out with a slotted spoon.
    take 1 or 2 ladles of hot water (still unsalted) and put them with the boiled garlic in the glass of the immersion blender
    add 2 tablespoons of evo oil. (In the meantime, please subscribe to the channel, it costs you nothing and is vital for us!)
    Now let's put the pasta in the boiling water that we will have already salted as usual.
    Let's go back to the mixer: add salt and grind a little pepper. Let's turn the mixer on and blend completely.
    In the pan where we will have already put the chili pepper, pour the contents of the mixer cup.
    Let's drain the spaghetti at least 1 minute before the right cooking and put them in the pan. Turn them and sauté them. Let's keep half a cup of cooking water.
    Let's pour more cooking water, in fact the spaghetti will quickly absorb all the liquid. Finally, add the chopped parsley.
    Serve at the table, with their sauce, still present in the pan!
