How to Eat Thai Nam Prik (Thai Chili Sauce นำ้พริก)

  • Nam prik (or nam phrik, น้ำพริก), Thai chili sauces, are a component of one of the most typical, everyday Thai meals. Check out some of the most common Thai nam prik here: www.eatingthaif...
    I think Thai nam prik (น้ำพริก) is one of the most under recognized dishes, or meals of Thai cuisine. There are many different types of chili sauces that you’ll come across in Thailand, some ranging from spicy and hot, other are fish tasting, and others are sweet and sour. Some are more sauce like, others are almost spreadable, and others are more sticky or liquidity. Nam prik (น้ำพริก) is the common name used to refer to all sorts of different chili sauces.
    The way you eat nam prik (น้ำพริก) is along with a pile of boiled vegetables, which can included everything from long beans to eggplant, to morning glory. The chili sauces are also eaten with things like fried crispy fish or omelets. Also, a plate of rice is usually included in a full meal of nam prik (น้ำพริก) eating in Thailand. You can either choose to take some vegetables or fish, and dip it straight into the bowl or bag of nam prik, or you can choose to take some fish or vegetables onto your plate and spoon on some Thai chili sauce to get a full range bite of everything including rice. Either way works well, and both methods of eating are equally as popular.
    Most of the time, Thai nam prik (น้ำพริก) is seen as one of the most basic and everyday foods in Thailand and it’s available in nearly every market. Most Thais would just drop by their market, order whatever nam prik they’d like, and then vendor will bag it up, along with whatever boiled vegetables and fish they chose, and then the person will head home to eat it. There’s usually never seating. You’ll also find nam prik (น้ำพริก) at nicer restaurants in Thailand where they might serve nam prik as a sort of an hordeavure dish. However, you rarely find a street food stall that serves Thai chili sauces (น้ำพริก) on the street, that also has tables and chairs for you to eat it right there.
    I was pretty thrilled to find this Bangkok street food stall that dishes up delicious chili sauces (น้ำพริก) for lunch, and also has chairs for you to sit it. The first thing you do when you arrive is walk up to the front and choose all the vegetables and fish or other items that you’d like and put them on a plate. One of the most popular Thai nam prik (น้ำพริก) is nam prik kapi (น้ำพริกกะปิ), chili sauce made with fermented shrimp paste - it’s such a delicious combination of fishy, salty, sour, and spicy. Along with boiled vegetables and the crispy fish, it was marvelous. I also ordered nam prik da daeng (น้ำพริกตาแดง), translated from Thai as red eye chili sauce. It was less spicy than it looked (it looks on fire), but it had a nice chili flavor, plus a hint of sweetness to balance it out. Finally, for my third Thai chili sauce, I ordered nam prik pla ra (น้ำพริกปลาร้า), chili sauce made with fermented fish sauce. This was also delicious, a little fishy, but with so much depth of flavor. Along with the vegetables and chili sauces, I also ordered a pla too tod (which is a fried mackerel ปลาทูทอด), a couple pieces of pla tod krob (crispy fish ปลาทอดกรอบ), and last but not least cha om kai (an omelet filled with climbing wattle shoots ชะอมไข่).
    Again, I think Thai nam prik (น้ำพริก) is one of my favorite parts of Thai cuisine, I love the compound flavors, and of course, the general spice and strong flavors that normally accompany each version. I also really like the vegetables and fried fish that goes with it. So if you’re interested in having a real local Thai meal, you should sample a variety of different Thai nam prik chili sauces.
    You’ll find nam prik everywhere in Thailand, but usually for takeaway. If you’re in Bangkok and want to try this place here are the details:
    Open hours: 11:30 am - about 3 pm (usually Tuesday - Saturday, but just so you know, this is street food, so sometimes they are closed without warning)
    Prices: Our full meal here, everything we ate cost 130 THB (about $4)
    How to get there: The stall is located right at the base of Sukhumvit Soi 101 in Bangkok, just a 20 second walk from Punnawithi BTS station exit #1.

    Nam prik is my favorite! It is very quick and easy to make. You just need 5 ingredients: a fresh clove of garlic, thai chili pepper, shrimp paste, sugar, and lime juice. Then crush everything together in a mortar and pestle to make the sauce. My mom has been making it for me since I was just 2 years old. She is from Thailand. Me and my mom have been calling it "stink sauce" for a long time because of the smell and potency from the shrimp paste used. Fried fish and rice is the best thing to eat with Nam prik

      ***** Good observation - this is really part of the Thai culture of eating - to order many things on separate plates and to pick and choose each bite - and usually just take bite by bite instead of serving a bunch of food onto your plate. I really like it too.

    There’s a restaurant in Jogjakarta, Indonesia where they serve many kinds of sambals, some are specialties from different regions of Indonesia. You might want to try it. I’m quite sure you’re going to love it. You can find its branch in other cities as well.

    This makes me miss home so much! Thank you for bringing the best of Thai cuisine to the world! BTW, for the Nam Prik Ka Pi, the "Pi" is always a low tone, not falling. You only said it that way one time when you introduced it, but the ka pi with the falling tone on the pi means the lady bit, not the shrimp paste. :)

    The video was great Mark! The dips or sauces look amazing although it can be a lot more spicy for the first time eaters. Woo that would be hot. Still worth the taste I believe.
    One thing I noticed in this video that I liked very much was that you added Ying to your ending credits. "Produced by Ying and Mark Wiens". Really she does quite a good job in capturing you in frame. Keep it up. Lots of Love from Kolkata, India.

    This was one of the things I was hoping to find on my trip to Thailand. My first reaction was "ehh...not for me" but during the meal I kept coming back to the dish. I could easily see how this is a favorite once you acquire the taste. I think I might start making my own but slowing building up the amount of fermented shrimp, since coming from a western cuisine, that is not a flavour profile we are very accustomed to.

    Sundanese in Indonesia also have kind of nam prik. They call it sambal. Eat along with vegetables raw or boiled called lalapan. Thumbs up Mark!

    I remember my first trip to Bangkok, went to Chinatown. The waitress gave us steam cooked fish along with 3 condiments of thaichili sauce> At first, I thought they were not too spicy, until the fire sensation kicks it... I cried like a sissy. Looking how Mark enjoying those Thai chilis sauce impresses me.

    I love it when my Mum boiled vegetables (sometimes with crispy fried cuttelefish and young bamboo shoots), with nam prik
    (she use to bring home from chiang mai, my favourites are Nam Prik gaeng (green chilli) and Nam prik ong (tomato based). I'm not very good with very spicy food so those are moderate.
    That's the only time where I enjoy the soft boiled veg and its very healthy yet tasty. Thats those times where she make me eat my veggies hehe.
    I watch very fascinated when she BBQ the green chillis, onion, garlics on a flat piece of metal plate. Pound them and add fermented fish sauce. yum the fragance.
    She told me that it may have originated from Portugese and mexican chilli.
    My palatte for Chiangmai food is better than common thai Bangkok food (tom yam, green curry) which is bit too rich for my taste.

    Some information of namprik.
    1. It is said to be an authentic thai dish, eaten in every thai household. Southern thais eat namprik kapi in their every meal, as far as I know.
    2. Cha-om kai is often eaten with namprik kapi only.
    3. Crispy fried fish is eaten with rice, never dip it with any namprik.
    Hope this help, traditionally or culturally.

    I love thai chili sauces! Especially SHRIMP paste chili sauce are the best and my favorite one!!! I think if garlic was put in the chili sauce, then it will add a boost to its flavors too! Thanks for the video!!!

    P'Mark that deep fried salty fish usually should be eaten together with rice. I usually eat that way because it's quite salty to eat that whole. Yeah, I grab it and bite that crispy fish and follow with a spoon of stream rice to reduce saltiness. That will be awesome combination in your munching if you do that. Also, the strong flavor of Nam Prik is designed to eat with a lot of vegetable too. It's very healthy to make you eat a lot of fiber. Do you think like me? Cheers, a Thai fan.

    Great looking food, lots of vegetables. I wish the traditional food in germany would look more like that. We have way too less vegetables in it and if we do they are usually cooked to death...

      Yeah , it's traditional but new our new gen doesn't really eat vegetables usually fast food or Thai food without eating any vegetables boy more than girls but thanks to advertisement and internet many girl eat veg as for health benefits and to take care their skins .

    I don't know how you eat your food so spicy. I tried to add the same amount as you did with khow soi and I couldn't eat it, it was so spicy. I should have known better but I just grabbed the small little cup and scraped in all the roasted chilis. I'll never do that again. You are a crazy chili man. Thanks for all your hard work.

      Before I started going to Thailand I thought chilies were just hot. Now I do understand that they add taste / flavor to what ever I'm eating and now I have to have Nam prik pla. But with that Khow soi it was just burn your face off hot and I couldn't taste anything but hot, hot, hot. I'll have to post some pics on G+.

    Yay Mark & Ying! Looks like I've got some answers to my thai chilli dips question. But this has now led to more questions.
    I didn't know about the 'Nam Prik' meal. So the chilli sauces are the 'star of the show', with rice, fish, veg as supporting acts. Like roast chicken being the star and the potatoes and veg being the support?
    This is such an incredible concept; and a bloody good one at that.
    ps. would you consider doing a piece on all the nam priks - names, recipes etc on video and book.
    ppss. loving the outtakes. Always make me chuckle. I didn't think you were going to make it with that giant cauliflower.

      leenee loo Hi, good questions, and yes you're right, nam prik is the star of the show. The nam prik chili sauces often include small amounts of protein, like shrimp paste, or fish, so traditionally, just rice, garden vegetables, and a nam prik (without even more fish or more protein), would have been a common meal as well. That's a good idea, and something I've thought about as well - I'm going to try to write at least a huge guide for all the different nam priks I've had so far - and I will try to make some recipes as well.     Nam prik da daeng are the best. I LOVE it. Its sweet but spicy at the same time. Sometimes it really depends on how sweet is it, too sweet isn't as good. A bit sweet and spicy is a killah.

    Absolutely satisfied after watching Mark eating Nam Prik! Btw, nam prik and 'bon' aren't they the same? Ex. Bon bla thoo (mackrel chili sauce) bon ma keua (eggplant chili sauce) hold on.. I gotta call my mom to prepare some, too! ^_^

      trumpet craz Thank you, good question. While the majority of sauces are a bit spicy, there are some that aren't. There's a nam prik called "nam prik ong" that's made with minced meat and tomatoes and not really spicy at all.

      This one is not spicy at all. It's called "Taw Jiew Lon". A bit sweet, creamy and cheesy one.
