Whenever I make a cream-filled roll cake, it always makes me miss my dear sister who is not with us anymore.😔As kids, we would anxiously wait for our local bakery to make the cream-filled roll cakes and on the way back from our school the bakery shop would be our stop. In her love and memories, I am dedicating this dessert episode to my beloved sister and my best friend.❤️ I have tested and retested this recipe many times and finally perfected it. The combination of chocolate and orange flavor is a luxury that only you can make at home for yourself. I also want to say that I used my homemade citrus marmalade to flavor the cream filling. I have shared that recipe already and I get a lot of questions about how long it stays fresh. So I will answer that here. Since the marmalade is candied and has no mixture left, it stays fresh for months in the refrigerator even though it is not pressure sealed. I keep one jar in the fridge and the rest stays in the freezer and it never goes bad for me. Let's begin our recipe then: MEK Chocolate Orange Swiss Roll (6 eggs separated- separate whites from yolks when still cold) 6 yolks at room temperature 1/4 cup sugar ½ tbsp coffee granules dissolved in 1 tsp water 1 tsp orange zest 6 tbsp oil ¾ cup cake flour ½ cup cocoa powder (sifted and then measured) 1 ½ tsp baking powder ¼ tsp salt 6 egg whites at room temperature ¼ sugar 150 grams dark chocolate chips 150 grams of heavy cream 1 tbsp corn syrup (optional) 1 ⅓ cups heavy whipping cream 2 tbsp sugar ¼ cup orange marmalade 1 tbsp orange zest Vanilla Grease and line with parchment a 13/9 cookie sheet. Heat oven to 350 F. Sift all the dry ingredients and set them aside. Whisk yolks and sugar together till pale and light. Add dissolved coffee, zest, and oil to it and whisk well to make it light and airy. Add dry ingredients to it and combine with a spatula. Add egg whites to a clean dry bowl and whisk it till it becomes frothy. Start adding the ¼ cup sugar to it gradually and keep whisking till you reach stiff peaks. Remember we want stiff peaks. Add about 1 cup of the egg whites to the yolk mixture and mix to make that mixture light. Add the yolk mixture back to the whites and start folding them gently. Keep folding till you see no streaks of chocolate left. At the same time try not to overmix it. Pour the batter into the prepared tray and spread it evenly. Tap it once to let the air bubbles escape. Back in the middle of the oven for 13 minutes. While the cake is baking dust a towel with cocoa powder and as soon as you take the cake out of the oven invert the hot cake immediately onto the towel. Peel off the parchment and quickly roll it starting from the shorter end, along with the towel. Try rolling it gently and a bit tight. Transfer to a cooling rack and cool completely Prepare the filling by combining all the filling ingredients. Whisk the cream and sugar till you reach soft peaks then fold the zest and marmalade and vanilla essence in it. Prepare the chocolate glaze. Combine the three ingredients and melt over a double boiler. Leave the glaze in the warm water so it stays runny till you fill and reroll the cake. Once the cake has cooled completely. Unroll it and spread the cream filling on it leaving about 1 inch of the edges clear. Reroll it gently. Transfer to a wire rack and pour the warm chocolate glaze over it. Transfer to the fridge and cool it completely. Slice it gently using a serrated knife and decorate it with fresh orange slices. Serve it chilled.😍
