Surprisingly, even though you didn’t mention the West Coast as a place where this chain of restaurants were located, I’m almost positive there was was a Houligan’s restaurant in Sausalito, CA way back in the 1970’s or 1980’s. We lived over in the East Bay and my brothers and I would go to Sausalito specifically just to get these delicious ‘shrooms! Thank you for this recipe!

Costco has them on sale right now (May, 2024), at a great price, and I saw one there in red. If I didn’t already have one, I’d get one of the red ones, cuz the one I got years ago is white.

New sub. Just recently got an outdoor broiler that can achieve up to 1500 degrees similar to Ruth Chris 1800 degrees broiler for 200 dollars on Amazon. Can you share or recreate the process involved in cooking Ruth Chris steak? Specifically ribeye and filet? I even bought the porcelain plate that can heat up to 500 degrees in oven.
So, as your luck would have it...I was Sales and Marketing Director at RCSH for 10 years so I may have some inside information😂 First, let the steak come to room temp before broiling, for about 20 mins or so. Then season with only Kosher Salt and cracked black pepper. The extreme high heat of the broiler is what creates that awesome crust. Cook your steak to your desired temp (R, MR, M, etc.) flipping half way through cooking so each side gets a crust. When steak is about 10 degrees (internal) below your desired doneness, take it out and let it rest for about 10 mins or so. It will continue to cook up, so make sure not to take it off the heat too late. Then, you can stick the plate in the broiler to get the high heat but BE CAREFULL!! The plate will be scorching, I've gotten a burn or two over the years. Right before you serve, top it with Land 'O Lakes butter and chopped curly parsley (optional on parsley). Enjoy, post pictures on my Insta so I can see your kick butt broiler and how the steak turned out. Also, make the RCSH Chop Salad and Berries and Sweet Cream for dessert and your meal is complete.
