This profession has been passed down to generations of the people of this city, and there are those who learned the profession in the city of Fez and worked here in Sefrou, Kalsi Muhammad Lahbahr, famous for the song Alou Lahbahr, who entered the profession when he was eight years old and practiced at the hands of a number of teachers. There are now two families who are still committed to working in this field. The family of Si Muhammad Lahbahr is represented in His son Mohsen and the Boutahiri family, where Abdullah Boutahiri supervises the shop located in Bab al-Murabba. There is the Al-Zohari family, the brothers Abdul Haq, Hamid and his son, in the Al-Haddadin neighborhood. In the past, kofta was pounded with long knives or skewers before the invention of the grinding machine and electric chopper. It was called souq kofta.
