In almost any resteurant I know of they claim that a carbonara is done with cream, bacon, garlic, and parmesan. I think they got the recipe from either Gordon Ramsay or Marco Pierre White.

Just fry some cubed smoked tofu in olive oil, obviously it is not guanciale but it still is absolutely delicious in carbonara and I am not a vegetarian ;)

It's not bad food though. I've cooked dozens of Adams recipes and they're amazing. The best part of his style is that he explains his process, alternatives and considerations in the video. The example above might not fit the definition of carbonara, but I'd rather make that than the classic style thanks to the increased veg content.

I recently made a wonderful carbonara and ended up using an entire carton of double cream. 😔 I seperated the eggs, mixed the yolks with grated pecorino romano and cracked black pepper, and stirred it into hot pasta and added crispy guanciale. I then beat the egg whites with sugar, baked it in a very slow oven, then served it the next day with the cream (lightly whipped) and fresh raspberries. 💔💔💔
Nah bro not really, but I guess I eat a lot of thai food so its more common to me. Thai garlic is small and strong, many US garlic is quite large but each clove's taste is quite "diluted". So 5 cloves may look like a lot, but if the garlic is large but weak its not that much.
Rosemary is indeed a strong herb that might not be for everyone's taste. Feel free to customize your dishes to your liking! 😄🌿 Experiment with other herbs and flavors that suit your palate. Enjoy cooking and creating dishes that make you happy!

I will make a "carbonara" with bacon for a quick lunch as I almost always have the ingredients handy, but I never have smoked bacon in the house. This recipe no longer resembles carbonara. The herbs are very upsetting.

I don't think pasta is sacred, it's very versatile and you can throw a lot of different things at it to end up with something tasty. But adding in a load of additional flavours and ingredients makes it an entirely different dish. But in this instance, carbonara or not, my own taste is that there is too much going on. I'm sure it tastes alright. But for me the real joy of pasta is often it's simplicity. Some of the best pasta dishes I have made or eaten have been ones that I could count the ingredients on one hand.
Poor Vicenzo! You still don't get it? You can get heart attack if watching too much of this stuff. For those people, they think any pasta with white sauce + some blackpepper sprinkle IS carbonarra! 😭 They do not understand the perfection of simplicity. Just 1 egg + 1 extra yolk. Pecorino/parmiggiano, pasta water, pasta, blackpepper and guanciale.. (although most of the time i'm using parmiggiano and pancetta/bacon--the ingredients hard to find) and sometimes i used 1 garlic clove just to infused little bit of garlic flavour then throw away the clove after cook it for 1-3 minutes with the meat. It just add subtle hint of garlic & it complement the flavour of carbonarra very well, personal opinion though But of course no milk, cream, or other strong herbs like rosemary, thyme, or sage. Also of course no chicken, no PARSLEY, and no peas! That will alter the texture and flavour so much that you cannot call it carbonarra anymore.

It may be disheartening to see, but it is critical that we remain informed. Although this is a poor rendition of a vegetarian carbonara, we did learn something from it.
It's difficult to find these ingredients outside of Italy; it's like going on a scavenger hunt, but if you can find them in your local grocery store, please buy them and recreate my carbonara recipe. I'm sure it'll taste divine.

For those people, they think any pasta with white sauce + some blackpepper sprinkle IS carbonarra! 😭
They do not understand the perfection of simplicity. Just 1 egg + 1 extra yolk. Pecorino/parmiggiano, pasta water, pasta, blackpepper and guanciale.. (although most of the time i'm using parmiggiano and pancetta/bacon--the ingredients hard to find)
and sometimes i used 1 garlic clove just to infused little bit of garlic flavour then throw away the clove after cook it for 1-3 minutes with the meat.
It just add subtle hint of garlic & it complement the flavour of carbonarra very well, personal opinion though
But of course no milk, cream, or other strong herbs like rosemary, thyme, or sage. Also of course no chicken, no PARSLEY, and no peas! That will alter the texture and flavour so much that you cannot call it carbonarra anymore.

Or because he didn't use the right kind of bacon? This kind of content generates clicks and that's why you see it popping up. But as long as you don't explain to me, how cream makes Carbonara worse, I really don't care. Does it taste good? Than it's fine. Gatekeeping at it's best...

I can only make a poor imitation of carbonara because i cant find guanciale or pecorino romano ANYWHERE.
It's difficult to find these ingredients outside of Italy; it's like going on a scavenger hunt, but if you can find them in your local grocery store, please buy them and recreate my carbonara recipe. I'm sure it'll taste divine.

I have a challenge, and know I'm not a Vegan, and there is the challenge, can you make Vegan carbonara? This means no eggs, well, nor butter. I've always thought Vegans are anti good taste, so I think it maybe impossible, but there it is.😂
