You can, it all will taste different. Pasi paruppu will taste like kootu. Masoor dal will cook quickly, you can make regular sambar with sambar powder. In our village everyone is used to toor dal taste and guests feel welcome with toor dal dish.
In those days there was no pressure cooker. It ll take time to cook dhall in a vessel. So they have followed this method for urgent requirement. It has different taste also.

Amma, can we replace thoor dhaal by 'paasi parupu ' or masoor dhaal?

How much LIQUID did you totally add for this recipe mami? It looks like you have added 1 key lime size tamarind ball for this sambar am I right.
About 2 cups of water. Total 500-600 ml. Yes lemon sized tamarind.
