BETH'S LEMON RICOTTA PANCAKES WITH RASPBERRY SAUCE
Makes 24 pancakes (serves 6-8 people)
LEMON RICOTTA PANCAKES WITH RASPBERRY SAUCE
Makes 24 pancakes (serve 6-8 people)
Ingredients
3 eggs
1 cup (240 ml) of ricotta cheese
1 ½ (180 g) c of flour
2 tsp (10 ml) baking powder
½ (2.5 ml) tsp salt
1 (15 ml) tbsp sugar
1 ¾ (420 ml) cup of milk
4 tbsp (60 ml) melted butter
2 tbsp (30 ml) lemon zest
powdered sugar for dusting
6-8 slices of lemons and 6-8 fresh mint sprigs for garnish
Raspberry Sauce
12 0z (340 g) fresh raspberries (reserve about 10 for garnishes)
2 tbsp (25 g) sugar
3 tbsp (45 ml) water
METHOD:
In a medium sauce pan, combine raspberries, sugar and water. Heat over medium low flame and stir occasionally to break up the berries and form a sauce. Keep warm on a low flame until pancakes are ready.
In a large bowl whisk together eggs and ricotta cheese until smooth.
In a separate smaller bowl whisk together flour, baking powder, salt and sugar. Add milk, whisk until smooth.
Pour flour mixture into your egg ricotta mixture until combined and then add melted butter and lemon zest. Stir until smooth.
Heat griddle on a medium-high flame until hot. You will know when it's ready when a drop of water sizzles and bounces on the pan. Grease lightly with oil.
Laddle out batter to form a 3-4 inch pancake. Once you see edges begin to dry and pancake bubble, flip the pancake. Cook on the opposite side for 1-2 mins.
Stack 3-4 pancakes high. Dust with powdered sugar, and drizzle raspberry sauce over the top. Garnish with fresh raspberries on top and a sliced lemon and mint sprig on the side. ENJOY! - แนวปฏิบัติและการใช้ชีวิต

Actually I would use orange zest before lime zest. Orange will be a better flavor pairing with the ricotta. Enjoy! :)

Absolutely! Strawberries or blueberries would be great! (So glad you like the recipes!):)
Oh yes it can be really confusing! And expensive!! But pots and pans are such a good investment, they last forever and really it does make a different in how your food turns out. My favorite brands are All-Clad, Le Creuset,and Williams Sonoma. And because it's expensive, start small and build on it every Holiday season or birthday. At the very start invest in 1 sautee pan and 1 medium sauce pan, and that's really all you need until you can afford to add to it :)
No not all, feel free to leave out the berries, the pancakes are still just as good! I hope your grandmother likes them and it restores her appetite :) Just having you make them for her I'm sure will make her feel better :) xo (She's lucky to have you).
Aw thanks :) Sure! You could definitely make the batter the night before. You may just need to add 1/4-1/2 cup more milk in the AM before making them to thin the batter out a bit. It has a tendency of thickening over night :)
Ah yes I've been trying to figure this out. I have found a couple of websites that will do this, create nutritional info for each recipe. And I was wondering if you guys would like that? If so LIKE this comment and I will start including that as well! :)
Sure once cooked, these will last for a few weeks in the freezer. Or the batter will last for 2 days in the fridge. Just add some more milk to thin out if using it 2 days later.
LOL yes it my book it would be a no go, BUT hey you should try it if you like, and report back the results :) But my instinct tells me you'll have one heavy little pancake on your hands!
hmmmm, you could just leave it out, or maybe cottage cheese would work? But I can't say I have tried that, but you could experiment and see what happens? :)

Yes of course, you could swap the regular flour for brown or white rice flour, and just add a bit more milk until the consistency resembles pancake batter :)
Ha! Hi Irish guy :) Well, cream cheese would be too heavy. Really best with ricotta, it's what makes them so light and fluffy! :) Is ricotta hard to find there?
Sure vanilla would be great, just leave out the lemon zest, or add orange zest instead. Orange and vanilla is a better flavor profile than lemon. Enjoy!

Bummer. If she can have Rice you could also make these with Rice Flour :) or Garbanzo Bean Flour. Same amount just add a bit more milk until smooth and creamy :)

Hmmm I think that actually may be too heavy to create a fluffy pancake. The ricotta is much lighter than mascarpone :)

Absolutely! They heat up really well in the microwave. Just wrap in paper towel, and micro in 30 second increments until warmed through. Enjoy! :)

So, I know Mother's Day is over...but my Mother's birthday is next Saturday and I was thinking about making these for her anyway. However, my mom isn't the biggest fan of raspberries and I was wondering if you had any ideas for substitutes? I was thinking blueberries, do you think those could work well? Thanks! xoxo
Beth! I made these this morning and they were delicious! Especially with the syrup! The lemon was perfect and I did use a pre made pancake mix and I thought it came out too salty but idk if that was from my butter. I didn't have un salted... But they still turned out super yummy:)
