Your recipe is nice. Just a note to everyone. I made 7 quarts of deer stew, pressure canned at 70 min at 11 lbs in my big pressure pot canner. a lot like this recipe, back in 1996. I ate my last jar about a year ago. Yeah, that long. It tasted like it did in the first few months, no difference. Texture too. I am sure many will say the nutrition is very low after that long but it was real good nonetheless. Now that's a long time.
I need to buy the gear to start canning my grandma use to put up hundreds of jars of everything out of the garden an meats! She made the best dill pickles in the northwest I sure miss her she was my most favorite person 😢

First thing I ever canned in my pressure canner was venison! Easy, shelf stable meals from scratch. Well done! Yum
