  • Mise En Place might just be the most important thing I learned in culinary school. I've always been the "go with the flow" kind of person. It's not that I don't like structure, I just always sort of saw them as "suggestions". If anything, I love being given a box so that I can think outside of it. When I studied music, I dreaded the repetition of scales and the monotonous studies, I wanted to play pieces. Somehow, I was able to convince my university flute professor for 3 years to let me only play the "fun classical" pieces. In my last year, I switched to a stricter professional who was a professional flautist and she did not approve of my approach of "playing for fun". I enjoyed her lessons and I think she liked me, but we both knew I lacked the discipline it took to become a professional musician. When cooking took centre stage in my life, the advice my flute professor rang in my ear "Freedom within discipline". Unlike what I had expected, professional cooking was not about creativity or experimentation. Not in the context of training in a kitchen as young chef. And definitely not without a solid foundation. Even though I have chosen to not pursue a traditional career in a restaurant kitchen. The training I have received taught me lessons that carries over to other parts of my life. Almost 4 years later since I was given that piece of advice, I think I am now finally just starting to understand it.

    What I can relate to is, as a quantitative researcher in a university, 80% of my work dedicate to data cleaning... Just like you mentioned some basic work in the kitchen... Small, Basic, Tedious, but important... Lol
