Feeling a bit sick, I decided to explore the lively streets of La Paz, Bolivia, in search of the famous Caldo de Cardan, a beloved Bolivian dish, known for its hidden powers. The meal is known for being a "natural red bull", giving people an energy boost like nothing else and even being used as a hangover cure.
Caldo de Cardan is a warm soup, the 'Caldo' part meaning 'soup', and the 'Cardan' part being local slang for "car drive shaft", because there's a component in the soup that looks like a car's drive shaft. The "component" is what makes this meal so bizarre, as it comes from the part of the bull you would never think to eat. But, in Bolivia, they found a way to make use of this part of the bull. Some people love it, and some people find it disgusting and gross and don't even want to try it. I decided to see who's right and give it a try.
