    Marshmallows
    Prepare pan w/ foil sling and cooking spray
    2 1/2 tablespoons gelatin
    1/2 cup cold water
    1/2 cup water
    1/3 cup corn syrup
    2 cups sugar
    1/4 teaspoon salt
    1/2 cup cornstarch
    1/2 cup powdered sugar
    1. bloom gelatin with cold water for at least 15 minutes (pour over water and let stand).
    2. While gelatin is blooming, In a saucepan combine water, corn syrup, sugar, and salt.
    3. Bring everything to a boil on medium-high heat. Swirl the pan from time to time, but do not stir (about 6-8 minutes). Let mixture boil until it reaches 240•F
    4. Turn mixer on low to break up the gelatin, should be the whisk attachment.
    5. Carefully pour hot sugar mixture over side of the bowl, and increase speed to high. About 10-12 minutes).
    6. Add about 2 teaspoons vanilla towards the end
    7. Using an oil sprayed spatula, quickly turn marshmallow out into prepared pan.
    8. Combine cornstarch and powdered sugar and sift over marshmallows
    9. Cover pan with plastic wrap and let set up overnight
    10. Sprinkle c/ps on a cutting board, and turn marshmallow out. Using an oiled knife, slice marshmallows and toss individual pieces in c/ps mixture, shaking off excess.

      Dirty Booty Soaps! I just tried to make them and they didn’t set up. It’s more like fluff. What do you think I did wrong? I mixed them for close to 20 minutes.

      Yeah I've just realized that, I didn't research thoroughly before making my first comment. Although it's still good for your teeth, it can cause nausea, vomiting and diarrhoea when ingested in larger quantities.

    I remember from the 1950s the old Campfire marshmallows that came packaged in boxes with waxed paper between the top and bottom layer. None of the "jet" puffed marshmallows that came after ever tasted, melted or felt as good in your mouth as the originals. So I started making homemade ones. People go crazy for them. Especially old folks who remember what a real marshmallow taste like. This is a great recipe, very similar to the one I use. Love the tricks and tips.

      It's so great to read a positive reply on this video. I've made this recipe for a couple of years now and I love it. It's a little bit of work to cut them, but they taste great. I sometimes dip them in chocolate, put a sucker stick in them and use them for Hot Cocoa stirrers. Delicious!

      Totally agree. I’ve never enjoyed store bought marshmallows so I thought I didn’t like them.. until I had homemade.. oh my godddd they’re soooo delicious! Way better than store bought!! Can’t wait to make this recipe!

    So i asked one time when i was kid, where do marshmallows come from....my mom told me they come for the MarshMallow plants grown in Florida. I am 44. until 5 years ago i believed there were marshmallow plants. My mom has sense died. Today i will believe they came from plants in florida...just for her.

    I have made these and they are so incredibly sticky! The dusting of powdered sugar and corn starch is an absolute must!! I usually add peppermint extract and swirl in red food coloring and that version is a hit at Christmas time!!

      Finally some comments about the actual theme of the video, instead of the "chef". I haven't tried making these from this tutorial. But I tried from another tutorial, & it was a fail IMO. They say they can store up to 2 weeks, but mine turned a moist sticky sweaty, after in a day. I must have done something wrong...

    Quick tip: If you don't want to "futz" with the marshmallow fluff when trying to put it into the pan, have a nice hot hair dryer near by on low setting to heat up any setting bits of fluff for easier handling.

    This is the best recipe for marshmallows yet! I was looking for homemade, because I wanted a "kosher" marshmallow made with beef gelatin, which are hard to find, and very expensive if you do find them. I bought a couple books about making mallows, but this recipe is better in texture than the other recipes or the store-bought marshmallows. They are bit softer and not quite as gummy and chewy. I use the home-made sugar syrup to replace the corn syrup and it works perfectly. I am also experimenting with fruit juices for flavorings. Made raspberry by switching out the water with raspberry juice and it was like "holy crap"! You will not find a better raspberry flavored mallow!!! If you coat them with berry sugar (the fine sugar used for making jams and jellies) that's been colored with a bit of the juice, you get the same result as those sort-of-strawberry-flavored marshmallows but without that horrible bitter red dye taste. They may not last as long on the shelf but they freeze beautifully in an airtight container. Honestly, though, mine don't ever make it to the freezer! I tried using the starch/icing sugar combo to dust the mallows, but I found them too sweet, and it seemed to cake on the mallow. Plus, after a few days, the sugar in the coating soaks up a bit of the moisture and the outside gets a gritty, sugary texture. I used plain arrowroot starch (you could try any kind of starch, I would guess). The plain starch sifted off very cleanly and only left enough on the mallow to keep it from being sticky.I would also suggest using oiled parchment paper. Make sure you cut your paper to cover the bottom and the sides of the pan and that the entire surface of the paper is rubbed with oil, and wipe off the excess. Your paper will peel off the mallow just as easy as peeling the backing off a sticker.

      @@be9u3m27 I used a recipe from a book I bought by Eileen Talanian. You can find her recipe at www.thekitchn.com/pantry-staples-diy-cane-sugar-131934 It is fussy to make. The trick is to use cream of tartar to prevent it crystallizing. You need to boil sugar, water and the cream of tartar together until it reaches 240 degrees. The syrup, when it cools, unfortunately, is far too thick to measure and needs to be heated first. It will also crystallize after a while, making it no good to use. I got tired of the extra work and switched back to corn syrup.

    If you sub the sugar and corn syrup for one cup of honey (light colored is preferred) it will work just fine. But when you try to roast them, the marshmallows won't brown, although they will still become all nice and ooey-gooey. Don't be alarmed by the color when you're whipping up the mixture. It will lighten as it continues mixing. Also, instead of cornstarch and powdered sugar, I used arrowroot starch/flour and it worked really, really well. Hope this helps.

    Tetrasodium Pyrophosphate is basically just a slightly stronger version of table salt.
    Pretty much the same with Blue1 to be honest. It's salt distilled into a water solution and condensed to get that brilliant blue colour.
    So basically what you're saying is that you don't want salt in your food...
    Please, can people stop this chemophobia already? It sounds intimidating, but it's really not. Learn some high school-level chemistry and you'll realize that your food manufacturers are not trying to kill you...

    Substituted the corn syrup with honey! It worked!
    Marvalous marshmallow recipe...perfect actually.
    Cleaning the beaters and bowl and scraper with your mouth is highly recommended 😀 before washing properly of course.

      @@ElizaHamilton1780 Corn syrup is fine, instead of PAM she could have used any liquid oil or unsalted butter. A non-stick pan might also work, although I've little knowledge on baking stuff things.

      PAM isn't an artificial ingredient. Also she used pam because it's a compressible mistable concoction. Spraying other oils doesn't work. They also don't prevent sticking nearly as well. Marshmallows are VERY sticky!

    Beautiful. I’ve known how to make marshmallows for a long time but never had a reason to do so. I hate marshmallow. But without chemicals they are an entirely different creation. And thanks for the suggestions for serving. I also don’t like s’mores but I love hot coco and coco-coffee. I might even share them next time. Lol!

    Your dad was right, in a way. Marshmallows used to be made by boiling the peeled root of a swamp plant called the Marsh Mallow with sugar. Then, some industrialist chemist figured out how to make them using this method. I love the story, though; very touching.

    I've made marshmallows without corn syrup and while they aren't as fluffy as what I normally make they're still amazing! I never cover my marshmallows while their "curing" over night I do sprinkle the powdered sugar & cornstarch mix on them.

      They turned out just right! Soft and squishy! One note though, they stuck to the foil a bit even though I greased it first (not too bad but I had to carefully peel it off). Next time I'd use thicker foil so I can rip the whole thing off more easily.

    Yummy! Kiddos love them too... fyi.. i have a hand mixer... got a workout but it worked... wasn't sure since i don't own a "kitchen aid" but it did the job... i placed my directly into freeze once in baking pan... then an hour later cut them... we could not wait overnight...lol

    Just tried these as well and they turned out well. However, one note of advise, i’d whip it slightly closer to the 10 min mark because every 30 seconds after that I found the marshmallow viscosity to really increase as it cools down. To call it a stringy, sticky mess is an understatement. So finding that “sweet spot” (pun not intended) before is becomes harder to pour it out is absolutely imperative to avoid a lot of frustration

      boil the sugar and water for 10 minutes or till the preferred stage,then add the gelatine plus water mix,leave to cool. Beat for like 15 minutes and pour onto a greased tray to set:) works everytime,made even last saturday:)

    I like your tips with the tin foil, spray and the strainer over the sink. I submitted some to the fair once from a jellow mold. I won first place. But some one took a bite out of a display marshmallow.
