    I immediately knew what it was! My mom is just beginning to eat more plant-based and she keeps calling it “traditional yeast“ 😂😂😂

    My popcorn mix: nooch, garlic powder, paprika, sometimes a little hot chili powder. For cheese sauces: cashews or white beans or a mix as a base, nooch, garlic powder, onion powder, paprika, red miso paste (really makes a difference), mustard, lactic acid, salt, white pepper + plant milk or water or both. For vegan parm, I also have found cashews to be better than almond meal, plus nooch, garlic powder, onion powder, red miso paste, lactic acid, white pepper, salt. The seasoning amounts are to taste, but largest ingredient of course is the nooch down to much smaller amounts of things like lactic acid, salt and pepper. The key is tasting and remember you can always add more, but can't take it out once it's blended. Once you get the basics figured out, it is easy to whip up a batch of any of these and eyeball the measurements. For cheese sauce, I will add a little ACV if it isn't tart enough, for instance, if I throw in some oat milk it can get a little sweet. And for an "egg" scramble, add some black salt, kala namak (it's not black in color) when it is all done cooking - if you add it during cooking, you will lose much of the flavor, it is very volatile.

    When I’m trying to replicate that tanginess dairy provides I use vegan lactic acid. Takes it to a whole new level!

    I am not a vegan but have been adding nooch to popcorn for a long time now. Got it to try to make a cheese sauce once (IBS issues in the family). Was not to bad, but I mostly use it for popcorn, and to put on pizza and pasta. I use strait up nooch, but might try it with some almond meal for the parmesan.
    I do love ranch flavored things, but most have MSG in them, and we have a family member with strong sensitivity/allergy to it. So I never have any. I will for sure try the ranch mix. And yes, it needs dill. I wonder if citric acid or dehydrated lemon zest could add that tang needed.

    Im with Sean (Shawn?), disliking vinegar. Looove nooch. Been using it since i got a cookbook from The Farm (vegan community), in 1975. Use in so many different recipes (our pizza cheez!) but our fave is on popcorn...so addictive! TFS!! You're beautiful.

    This recipe ruined my dinner! (in a good way)😂 My intent was to make the salad dressing but first I had to try it on a few nachos. That led to trying on a few chips which les to trying it on pecan halves. Now I’m no longer hungry for my salad!😂 - Thank you for the delicious recipe.     Two of my favorite vegan secret ingredients are cashews (soaked and blended for creamy soups and dressings) and ground flax seed soaked in water (or plant milk) to replace egg in recipes.

    Thank you so much. Especially as a dressing. Most oil free dressings are nasty and because I make giant salads for dinner I end up using too much dressing. Lots of calories and stuff this a gift. My salads consist of 12-16 ingredients. I usually just sprinkle on nutritional yeast.

    You have shared some amazing tips here. QUESTION: what can I substitute for almond meal. Due to the high oxalate count in almonds, I can't eat them.

You might consider using: coconut flour, cashew or hazelnut meal, sunflower seed meal, or pumpkin seed meal. I haven't tried any of these, but I imagine each option would bring its own unique flavor and texture. Experimenting with different substitutes can be a fun way to personalize your dishes.       I feel ya! I grew up very rural (town of 1,000 people!). Those stores don't carry much. But the good news is that it lasts a long time. So next time you're in the city, you can get a whole bunch of it!

      Hi Jaycee! So nice to meet you! Yes, most nutritional yeast flakes have been fortified with B12 making them a great source for this important nutrient. You can buy unfortified (or is it non-fortified???) nooch, but I think it's harder to find and probably more expensive as a result. 🌺

    I have powdered coconut milk, would that work instead of the powdered soy, or would that not give it the tang to which you're referring?

      I think powdered coconut milk would add too much coconut flavor. Others here have mentioned using lemon zest to get that tangy flavor.

    nooch of course!! But I love popcorn in the whirley-pop so much that I don't bother with it because it doesn't stick very well and it ain't cheap. I buy unfortified which oddly is a lot more than fortified.

      Hi Marge! I hear you about the sticking issue, especially with the Whirley-Pop method. Have you tried lightly spraying the popcorn with a bit of oil? Do you notice a difference in taste or texture between the fortified vs unfortified? Thanks again for your input!

      @@Namelymarly Hi Marly, I read something but didn't save the link about how synthetic nutrients such as folic acid aren't doing us any favors and that nonfortified nooch is better. The first brand I bought was Foods Alive and I found it very lacking in taste. I then bought Sari, which I love. I also bought Well Your World nooch, which is great and slightly cheaper than Sari. Fortified/nonfortified, I see no difference in texture. I think nonfortified is slighter lighter in color. And again, taste depends on the brand.
      I don't keep spray oil in the house so haven't tried spraying the popcorn and then adding nooch. I do use coconut oil in the whirley-pop and love the aroma and have a feeling it adds nothing to the taste. Never tried it plain. I'm lucky to have zero craving for more flavor, and I don't mind saving my nooch money!

      Absolutely, you can use dried oat milk or dried coconut milk. I'm not sure it will give that same tangy flavor. Some folks have recommended adding lactic acid powder or even dried lemon zest. I hope this helps!

      If you're trying to get the nooch or other ingredients to stick to your popcorn, someone else recommended spraying the popcorn with pickle juice. Alternatively, you could use Braggs or something like that. I hope this helps!

      Great question! I used dried herbs because fresh herbs could cause the seasoning to clump. I should have clarified that in the video.

    Almond meal is very expensive. I make my Parmesan with cashew ground cashews and I think it tastes so much better than almond flour. Then forget the black salt why don't you add for the cheesy flavor a little bit of white pepper and the nutritional yeast. Try all that combination and you'll ditch your recipe and I think you'd like this one better

      Thanks for sharing your thoughts and suggestions! It's interesting to hear about your experience with cashews. I find them to be pretty pricey, but I imagine ingredient availability and pricing can vary widely depending on where you are.
      My recipe uses nutritional yeast flakes for that delicious cheesy flavor. While I didn't include black salt, I appreciate your recommendation to try white pepper alongside the nutritional yeast.       @@Namelymarly I get it. I’m not into noosh too much but I do make chickpea salad for sandwiches and hummus. And it’s part of my four bean salad with balsamic vinegar dressing. I also make chickpea flour pan cakes or frittatas.

    Nutritional yeast tastes terrible. One of the most annoying things about vegan recipes is how many of them have nutritional yeast as an ingredient.

      I appreciate your honesty! I doubt there is any one ingredient that is loved by everyone. Nutritional yeast definitely has a distinct taste that isn't for everyone. It's interesting how tastes can vary from person to person. While some love it for its cheesy flavor, others might not be fans.       Hmmm. I'm going out on a limb here, but it sounds like nutritional yeast flakes might not be your cup of tea. Taste preferences vary widely, and not every ingredient appeals to everyone. For example, my hubby hates mushrooms, but I love them. Go figure! If you're open to it, there are plenty of other delicious vegan alternatives out there. Thanks for checking out the video!
