yummm i do love an austrian cake. had a austrian executive chef many years ago who loved to do a bit of baking on the side. his cakes were stupendous! it would appear that most austrian cakes he made didn't require flour, or very little. his almond flour cake with a custard based icing was the best thing i have ever had. that cake was still as fresh and tasty after a week as when made.

My brother and I would borough over and over the same book at the local library: it was a book talking about each country of Europe (and another one of the series about world wide cultures) through cooking, singing lullabies and celebrating holidays. We absolutely loved the austrian double-page and were starving in front of the Sachertorte, strudël and other delights. To this day, I wonder what is the original recipe 😅 (according to this book, they keep it secret).
Hi Gemma! The idea of whipping the egg whites separately is a good idea. In tasting Sacher cakes from different bakeries in Vienna, I have never seen one with a rounded top. The cake is usually flipped to cool after baking, then a fine jam is brushed on to set overnight. The next day the process continues with/without filling and a perfect chocolate "Ganache" is applied. I received my recipe from an Austrian lady; the original cake is indeed time-consuming.
I love it. I love you content for many reasons, but it first caught my attention because you would mention Fahrenheit and Celsius and often share what you can supplement ingredients with if you can’t them in your country. With my husband coming from the US and me from Austria we use a lot of different recipes. We live in Austria though, and we can’t get everything. Although we can a lot more now than 10 years ago, I still really appreciate your respect and understanding for different countries counties.❤

Looks amazing! I need to make this for my chocoholic grandson’s birthday. I love apricots, and was very lucky that we had an apricot tree when I was a kid… my mama always made a bunch of apricot-pineapple jam, and it’s the best, especially with peanut butter!🤤❤️
It is smooth. Use a scraper in smoothing out the surface for a much better finish. I don't do much decorating and usually go for the rustic look, hence I don't really have all the tools most pros use for cake decorating. The flavor however is really good. Don't like to correct people but appreciate it when others do that for me... so here goes: Sacher is not pronounced as Sasher, but closer to Zakker. The ch is pronounced as though you are clearing the back of your mouth (ready to spit, so to speak). The S either sounds like an S or a Z depending the region. Sorry for that image. @@nanah2000 Austrian ancestry here and could never understand the fuss made over this torte. It is very basic compared to what my Mom used to make for us on special occasions or even other ones in a Konditorei (a place to buy cakes and pastries to eat back home or to consume on the premises with coffee, tea or some other beverage). I have had a lot of genuine/traditional ones given to me as gifts.
I had one of these in Vienna and ate so much...in fact...I had two of them! They were so rich, I was awake for a week!!! 🤣🤣🤣 They are de-li-cious😍 I still have the boxes they were sold in 35 years ago. Great job. Easier than I thought.

I looked back at the video and she did say that. I clicked on the link to get the recipe and they used all the egg whites before adding the flour. Problem solved! Blessings to you!
Hi. With a metal spoon, gently fold in ⅓ of the whipped egg whites into the chocolate mixture to lighten the batter before folding in the remaining whites. Lastly add the cake flour in 2 additions, mixing just until combined. Hope this helps.
Hi Gemma. This looks wonderful & I have everything to make it. I don't, however, like or have, any Rum. Is it necessary, & can I just use the apricot jam without it? Would I still need to cook down the jam?

Hi. Because eggs, both the yolk and whipped egg whites, are essential to the flavor and texture of this traditional recipe, I wouldn’t recommend making Sacher Torte without eggs. I also wanted to share with you that I recently followed your banana bread recipe (after also watching your video about how NOT to make banana bread), and, after 20 years of truly terrible banana bread results (most inedible!) that I had blamed on having an electric stove here when I had previously only used gas, I had my first success!!! Following your recipe, my banana bread was moist, rose beautifully, and tasted so good!! I hadn't even tried to make it in probably five years, and I really wasn't expecting a different result than all my prior attempts, but your recipe and the cautions about what not to do produced a PERFECT light, tasty, moist bread!! Thank you for helping me overcome my reluctance to bake because I erroneously felt my stove was ruining my results!! It wasn't my stove at all; it was inferior recipes and my own shortcuts that were my undoing!! You are awesome!!! ❤❤❤
