    Hello, I am Joconde.
    Finally, it is Sacher torte.
    Haven't I had a chance to make this cake?
    Or is it because I put off making a simple cake because I was too focused on decoration?
    Now I finally got to make this beautiful Sacher torte video.
    This cake’s recipe is so famous.
    So, based on the original recipe, I only add very small changes.
    Don't you think it's the best cake for a New year ’s cake?

    ingredient
    ♥︎ Sacher Sponge (⌀ 15cm)
    65g butter
    30g icing sugar
    60g dark chocolate
    60g egg yolks (3 eggs)
    95g egg whites
    60g sugar
    50g cake flour
    13g cocoa Powder
    ♥︎ Apricot Puree
    160g apricot Jam
    15g water
    (Heat in the microwave until it starts to boil)
    ♥︎ Apricot Syrup
    30g hot apricot puree
    20g hot water
    (Use after cooling)
    ♥︎ Dark Chocolate Ganache
    90g dark Chocolate
    90g heavy cream
    9g butter
    ♥︎ Decoration
    ‘Sacher’ printed stencil (ordered from the stencil maker)
    Stencil design download blog.naver.com...
    Mousse ring (⌀18cmx h 5cm )
    Adhesive tape
    Cocoa powder (Hershey's cocoa powder - I chose it because it's lighter in color than chocolate ganache.)

    멋진 레시피 감사합니다. 혹시 오리지널 자허호텔레시피엔 초코글라세쥬를 설탕시럽으로 하던데 차이점이나 단맛뿐 아니라 결과에 차이가 어떻게 다른지 예상이 안되어 여쭙고자 합니다. ^^;;

      안녕하세요. 새해복 많이 받으세요^^
      네 오리지날 레시피는 설탕 시럽을 끓이고 거기에 초콜릿을 녹여 완성합니다.
      제가 그 방법을 하지않은 이유를 말씀드리면,
      우선 오리지날 레시피 대로 할때 시럽의 끓이는 시간이 강불에서 5분으로 나옵니다 .
      그러나 그렇게하니 시럽은 너무 걸죽하고 결과적으로 초콜릿 글레이즈도 걸죽해졌습니다.
      그리고 초콜릿을 녹이는 과정에서 완전히 유화를 시켜 매끄러운 질감으로 만드는데 시간이 좀 걸렸습니다.
      그리고 글레이즈를 잠시 식히라고 나와있습니다. "Leave to cool a little" 이렇게요. 이 부분이 애매합니다.
      물론 무스케이크가 아닌이상 온도영향이 크진 않겠지만 여러번 만들어보지 않은경우는 감을 잡기 어렵습니다.
      물론 제가 좀더 테스트해 보았어야 하는데 그러려면 케이크를 도대체 몇개나 만들어야할지 ㅎㅎㅎ. 그러나 일단 식히고 40도 정도 에 부었습니다.
      식으면 표면이 윤기는 사라지고, 매트하게 코팅 됩니다. 좀더 얇게 코팅하기 위해서 스페츌라로 윗면의 초콜릿을 훝어내려줍니다. 이 과정에서 옆면이 매끄럽지 않게 되었습니다.
      겨울이라 그런지 부으면서 금방 식어버려서 그런가 봅니다.
      글레이즈가 어느정도 굳으면 표면에 뭔가 결정이 작게 보입니다. 글레이즈를 만들로 식히는 때에 보면 표면에 설탕 막이 생겼었는데 그걸 깨고 잘 저어서 질감을 고르게 만들어서 부었지요.
      그런데 코팅후 보니 표면에 아주아주 미세한 입자와 기포가 느껴집니다. 이것은 시간이 지날수록 눈에 띄지 않습니다.
      어쨌든 굳고나서 시식을 합니다. 코팅의 식감은 정말 미세한 설탕 막이 부서지는 느낌입니다. 씹을때 마다 슈가파우더 느낌이 느겨집니다. 감이 오시나요? 그리고 달아요.
      전 케이크를 많이 먹어서 입맛이 단편인데, 많이 달았어요. 글레이즈 들어가는 설탕의 양이 초콜릿 보다 많거든요. 물론 물이 들어가긴 하지만, 끓여서 시럽으로 만드니 달 수밖에 없을거에요.
      아마 코팅을 더얇게 하면 덜할 거에요. 하지만 오리지날 레시피 설명 보면 글레이즈 테스트로 국자 뒷면위에 흘려 보았을때 4mm 두께정도로 형성되면 된다고 했으니 제것이 그리 두껍지는 않은거였어요.
      결론은 더 여러번 테스트 해서 코팅의 온도와 두께를 찾아야 하는데 그러기에는 시간과 재료가 아깝고, 찾았다 해도, 그걸 알려드려도, 홈베이커들은 실패율이 높겠구나는 직감을했어요.
      게다가 평범한 가나슈도 충분히 맛있고 또 더 부드럽기 때문에 이번 레시피로 선택을 했습니다.
      궁금함이 해결되셨을까요?
      이건 어디까지나 저의 짧은 경험이고, 감히 레전드 오리지날 레시피를 이렇게 표현한것이 좀 송구하네요. 기회가 되면 더 테스트 해보고
      갓벽한 오리지널을 구현 해보고싶네요.

      이렇게 정성이 가득한 답글 감사드려요. ^^ 안그래도 시트를 두배합 하여 두판을 구운뒤에 한 판은 선생님 레시피대로, 한판은 초코글레이즈만 설탕140, 물80, 다크70% 100g 으로 하여 만들었어요. 말씀대로 시럽으로 한것은 달아요..엄청...ㅎㅎㅎ 초코파이 같달까요. 확실히 선생님 가나슈로 한것이 훨씬 고급스럽고 시트도 가볍진 않지만 묵직하지도 포슬거리지도 않고 촉촉하니 밸런스가 참 좋았어요. 물론 선생님꺼에 비하면 글라사쥬가 매끈하진 않아도 맛은 좋아요. 감사해요. 연구 끝에 훌륭한 레시피를 구현해주셔서 더욱 감사합니다. 아무리 원조가 맛있대도 한국인은 너무 달고 원초적인 단맛은 꺼려지니 디저트를 연구하실 때 어려운 점도 많으실거 같아요. 하나씩 차근차근 선생님의 훌륭한 레시피로 맛있는 케이크를 만들어 즐겨보도록 할께요.

    For anyone curious as to why a Sacher cake is so famous - in 1832, Austrian chancellor wanted to impress his dinner guests with an impressive dessert, however, he became sick the same evening he was going to present it. The chef’s apprentice, Franz Sacher (of only 16 years of age) concocted the original Sacher torte - a chocolate sponge cake typically made with apricot jam and dark chocolate icing. The original Sacher torte recipe is a well kept secret, not so much for the cake itself, but rather the icing, which has been noted to be made up of 3 different types of chocolate.

      @@HJHecking it's not sounding like this just english people mostly don't pay attention how other languages pronounce something but they immidiately pronounce it like their language ...(which is a bit disrespectful in my opinion), recently I was shocked on how english people pronounce croissant without even googling to know how to pronounce it

      Thank you for your wonderful dictionary. And I noticed now that Sacher was 16 year old yet? wow. Recently Hotel Sacher finally revealed the recipe. I dared to slightly modify the recipe.😊 but it still good because it is still based on original one.

    방금 마무리해서 냉장고로 고고했어요.
    남은 짜투리 시트에 살구잼 바르고, 가냐슈
    얹혀서 맛보는데~~시트가 입에서 살살 녹습니다ㅎㅎ엄청 부드럽네요^^♡ 다른 케이크에
    비해 복잡하지 않은 공정 과정과, 맛또한 맛있어서 2022년 마지막 날 제 입이 사치를 부렸네요ㅎㅎ맛나게 잘먹었습니다🥰🥰

    Joconde's soy tu fan numero 1. Hice el bizcocho o la esponja y me quedó como una piedra, seguí tus pasos uno a uno pero me quedó fatal. Lo único y más relevante es que dupliqué los ingredientes para hacer una tarta el doble de grande y tardé mucho en montar las claras y el chocolate creo que se me enfrió un poco cuando ya tenía que mezclar, crees que esa puso ser la causa de mi mal resultado??. Un abrazo muy fuerte. Eres la mejor, la más detallista, delicada y tus sabores los más delicados y maravillosos que haya probado.

      @@싫어함과제를만들어 봤어요!! 예전 다른레시피는 살구잼만 발라서 케잌이 퍽퍽했는데 살구시럽+살구퓨레로 발라주니 케익이 촉촉하고 더 맛있어요!!

    Я пробовала этот торт от разных кондитеров. Мне кажется, что джем не должен быть чересчур сладким. Приторность портит торт. Вся прелесть торта в балансе шоколадного бисквита, горькой заливки, масляного крема и слегка сладкого слоя джема. Именно баланс. Попробую сделать этот торт. Посмотрю или этот баланс был соблюден. Спасибо за рецепт.

      Торт "Захер", который является визитной карточкой Вены - это первое, что я хотела попробовать приехав в Австрию. Признаюсь, была разочарована - обычный шоколадный бисквит смазанный приторным абрикосовым джемом, который как бы не к месту. Торт должен быть с кремом, а не с джемом. Поэтому не могу понять восторгов: "потерял дар речи" и т.д. Не хочу обидеть жителей Вены, но если честно, там нечем восторгаться от слова "совсем".

      @@jpFr7kfdt1grsmo3 Потому, что они используют приторно сладкий джем. А к нему надо добавить лимонную кислоту и , наверное, агар-агар или желатин. Тогда все продукты в балансе.

    +) 케이크 시트에 슈가파우더를 넣는 것은 이번에 처음 접했는데, 혹시 설탕을 넣었을 때와 어떤 차이점이 있을까요? :>

      안녕하세요^^ 우선 새해복 많이 받으세요. ^^
      정말 시트가 부드럽죠? 일반 버터케이크는 촉촉하긴 해도 입자가 좀 있는 편인데 이케이크는 묵직한 맛인데 식감이 부드럽고 곱자나요 ^^
      슈가파우더는 입자가 곱지요 그래서 잘 뭉치는데 이를 방지하기 위한 전분이 소량 들어있습니다.
      그래서 이 설탕은 베이킹 재료안에서 매우 빨리 녹아 퍼지죠.
      버터에 설탕을 넣어서 크림화하면 기포가 생성되잖아요.
      이때 슈가파우더를 소량 쓰면 버터의 크림화는 빨리 일어나지만 작은 기포가 생성 된다고 합니다.
      그래서 결국 케이크 입자가 고와 집니다.
      그리고 슈가파우더가 입자가 곱고 빨리 녹는 만큼 수분을 더 잘 끌어온다고 해요.
      그래서 크림화된 버터를 보면 동량의 설탕을 이용했을 때 보다 좀 묽게 보입니다.
      결론적으로 케이크가 퍼지 하면서도 텍스처가 곱고 촉촉해 집니다.
      히지만 너무 많이 쓰게되면 역으로 건조하고 케이크가 바스러지는 결과가 생깁니다.
      하지만 제가 슈가파우더를 더 많이 해보니 케이크의 윗면에 크러스트가 얇게 생기고 껍질이 쉽게 바스러지는 현상이 있었습니다.
      그것 떼먹으니 바사삭 거리는게 너무 맛있어요.
      하지만 케이크가 너무 바스라지면 안되니 적절한 배합을 찾는것이 중요해 보입니다.
      쿠키 종류에도 설탕 대신 아이싱 슈가를 넣는 것이 있지요. 스노우볼 쿠키 같은거요.
      슈가파우더를 넣은 쿠키는 입안에서 오독오독 부서지는 것이 아니고 바사사삭 부서지는 식감을 만듭니다.
      진짜 맛있어요 ^^
      또 아이싱슈가 속에 든 전분때문에 생크림 휘핑을 할때 사용하면
      오버 휘핑시 나올수 있는 수분을 빨아들이므로 좀더 안정된 크림을 만들 수 있기도 합니다.

      두번 부으면 돼요. 한번 부은후 굳힙니다. 냉장고에 잠시 넣어두어 차게한 후 한번 더 가나슈를 부어줘요.

    Boa tarde 🌻🇧🇷 A torta ficou muito bonita, a escrita sacher polvilhada com cacau em pó ficou elegante. O sabor do Damião no recheio e parte externa penso que combinou, o azedinho do damasco e o chocolate. Parabéns!

    One of my favourite cakes of all time, in my top 3. When combined with a hot cup of black tea, it is a piece of heaven on earth. The crumb structure looks outstanding and moist.     Thank you for such a great cake! I have only one question - when the cake is put into the fridge to harden the ganache, won't it get some drops of water on the surface? I mean condensation. Thanks in advance.

      Yes, you will have dew on the cake. First, set the ganache on the cake at room temperature first. When it is fully cool down, put it in a paper cake box, not glass dome nor contaier. Then your cake will be fine.

    This recipe was created in my home town! Last year, there was a competition for the best Sacher torte and there were around 20 cakes presented by bakers from near and far. Citizens were free to taste them. I hope it becomes an annual event :)
