When I built mine, I had to split the canopy down the middle and space it out with a strip of plastic card. I had the same problem with the back of the canopy and the fit to the fuselage. I squared the fuselage off and again filled the gap with some plastic card. I don't recall the fuselage seams being too problematic. I also purchased a detail kit for it, so my internals are mostly etched brass (there's even a toilet in mine)!
Have you ever tried "glue an glaze"....you can make windows out of it,but it does shrink...takes practice but does actually work,especially as a clear glue,i use it to make car headlamps etc,or windows in a loco.i like it a lot,again be prepared to let it completely dry and do some more.
If you ever need to remove a stuck on lid of a bottle get a boot lace or similar, loop it around the lid twist it till tight then start to turn the bottle. Use it like a slip knot. I hope that helps to save your teeth.
The canopy masks fail because you put too much paint on them. Good news though...it is repairable. Take a piece of sprue. Sharpen it and you can take off the paint following the moulded lines on the canopy. The poor fit of the fuselage is because you tried to glue the whole thing in one go. Using tape when dry fit, a line and glue the aligned section. Allow it to dry before moving on. It takes time but it is worth it.

To get the paint off the canopy, stand it in a bowl of Dettol for 10 minutes
