Same reason people watch sports or movies or play games. It’s called entertainment. Why are you on watching a documentary on player from a game you don’t even like?
The thing that makes parry consistent (if you're as good as aMSa) is the way that parrying works out of crouch, and the fact that those two frames of invincibility are the first two of the parry action. Picture a falco down-airing at yoshi, and yoshi crouching. For some number of frames, the falco's down-air hitbox is above the crouching yoshi, in the space that yoshi would be if he were to stand up. When the yoshi inputs shield, the first input of the parry, he is instantly invincible, and switches to the standing up position (Similar to how marth power-shielding falco laser works). So yoshi has stood up into the falco down-air with invincibility, after which the yoshi will jump out and punish with an aerial. You can perform the parry at any point during the time when the opponent's hitbox is occupying that space above the crouch. It's still a tight timing, and the specifics vary based on character, move, how the opponent fast-falls, etc., but it gives yoshi a little bit of leniency to work with.
