I love this kind of thing, UFO 50 is problably my new favorite game so far. Also, other console that is pretty much like pico-8 is TIC-80, i remember people making games for it even in android... There's the series of fake consoles in Retro Game Challenge for DS too, these are the ones I can think of
You could also add Videoverse to this list: a great visual novel set around the fake Kinmoku Shark games console. One of my favourites from last year, and a real treat if you remember the Miiverse on the Wii U (RIP).
While not as fleshed out as the others here, I think the console in Tormenture is a fun one since it ties into the game's story and core gameplay loop pretty well.
Great vid! With the success of 'Bloodborne PSX' and fantasy PS1 demo disks, it seems like a lot of low-poly game devs have a particular love for the "PS1 look", which may explain why they didn't bother to come up with a fantasy console? If someone made a 3D fantasy console as high quality as PICO-8, I would be so hype! I'd basically HAVE to learn to make games, right?

well the PICO-8 dev does have Voxatron, which seems to be a lot less popular, but it's 3d at least. step in the right direction!
