I've just started using sous vide. I use a large stock pot and cover the top with aluminum foil. I've thought about getting a sous vide container but decided it was just one more bulky kitchen item to store. Nice video though.
Unfortunately, I don’t have a lid for my 12qt, which to me is the most practical size to do the experiment on. I have a lid for my 16qt, but that’s an Anova container and lid, which I’d expect to perform better than most lids, so that’s be somewhat misleading. What you’re looking for is makes sense. I just don’t have the equipment to do it. Thanks for watching and commenting.
Update.. I purchased the balls. 1 hour into cooking, I held my hand over the floating balls and could not feel much heat loss. When I hold my hand over a container lid, I feel more heat loss. I believe the balls are actually working better because they add the air barrier like a double insulated coffee/water bottle does. A simple single sheet of foil over the container with the use of the balls pretty much kept the heat in the container with minimal loss. I believe it may not be necessary but definitely more efficient!

I do. A lid is going to be more effective, but you lose some flexibility.
