Finally someone tells people to smoke cold meat! I worked at a butcher/locker plant for years and I learned that if you want a better smoke ring to put the meat on right out of the fridge/cooler. Great job man!
Hello T-Roy. I discovered chuck cooked on my smoker. I prep mine with a beef stock and butter I inject the roast. I put it on the smoker at 225F for about 4 hours. I then wrap at this time and pour some mor iniection over the roast and cook it until it is fork tender. I also pull my roast, saute some onions and mushrooms put the pulled roast and onions and mushrooms in a hogie roll and eat. I use some of the stock from the roast as a dipping sauce. With a cold beer, you can't beet it. YUM,YUM .
First time doing a chuck this way, after about 5 hrs smoking at 275 on my WSM I put it in an dutch oven in at 250 until it hit 210. Omg is it tender and delicious. Plus all that deadly juice to use for something later... love it. Thanks brother, cheers!

Hi there Mr. T-Roy. So i DID DID get my 57 cm Weber Smokey Mountain. You could NOT find it in South Africa so I squealed a bit here and there and soon I got a call saying we've got a few coming in. And just before Christmas it arrived. Have zero idea why South Africans have not cottoned on to this. So I gifted it to my son immediately and before the night was out he had found YOUR goodly vids and next day he knew far more than I did. We've had fantastic adventures. We had 2 humungous slabs of 7 rib each Beef shortribs. He had 2 different ways on each, set one each on the 2 grills. the one he covered up was IMHO better. It melted. We did a huge brisket (fantastic) and he and his dad did some pork spare ribs. I don't eat pork. Problem we have here is WOOD and suddenly I realised why South Africans don't do this. We just don't have the wood. We have imported chunks which are very difficult to come by. We bought some called hardwood (Sickel wood) and I do believe the taste can improve. I cooked a 4lb Angus Chuck roast a couple weekends ago on the wsm. Took about 6-7 hrs or so and was one of the most delicious things I've smoked so far. Beautiful bark, smoke ring, and flavor. Was on sale for 2.99/lb so had to go for it. Love your videos T-Roy. Keep 'em commin'!
Awesome video and food!! I always thought beef chuck roast would be dry and tough on the smoker. Here in the mid-south, all we do is pork shoulder. Nice!! I will for sure have to try this.

That looks SO good, Troy ! Last time I smoked a chuck roast, it came out a little dry, but I didn't finish it off by braising it in beef broth. I have been practicing on the chuck, before doing a brisket, and you just showed me how to fix the problems I have been running into. Ready to try again, and will see if I can do something similar.
You've got this Scott!! Only thing I'd change when doing brisket is to wrap the brisket in foil instead of putting it into a pan, but either way will work. Brisket tends to get fall apart tender in a pan and you won't be able to slice it unless you closely monitor the internal temps of the meat.
Thanks. Cooked one a couple of days ago using your method - it came out great EXCEPT for the worcestershire sauce which gave it a strong, skanky taste. I'll do another one but this time, without the worcestershire sauce.
T-ROY COOKS - For me when cooking I find that the meat has more flavor if you leave the Rub on longer before you throw it on the cooker. I should season some then put in back in the fridge and put it on cold like you said. Anything is worth a try. Haven't tried the Chuck Roast that way yet but I have been talking about doing it. Im doing a smaller one today, Im gonna smoke it with some oak lump, and some pecan chunks mixed. Smoking on the grate for 3 hrs then Im putting it in a large pan full of potatoes carrots, onions , chunks of corn on the cob, and a few mushrooms.

I’ve cooked two or three of these a month lately and they are good. Specially when HEB runs the prime ones on sale. I have settled on light SPG and then heavy coat of Cimarron Doc‘s Gourmet and barbecue rub. For some reason that rub really hits it off with chuck roast.
I plan on doing this tomorrow.. Was only able to get a 3.5 lb roast (it's only for me anyways) it is a black Angus prime choice.. Not going all out for the first time doing beef.. Using WS and Harry Sow's Beef Rub on it. Love the videos and cheers brother!!!
T-roy, you do not disappoint brother! I’ve got a chuck roast I’m fixing to smoke tomorrow, first time with that, and I love the idea of putting it in the beef broth. I just so happen to have some broth after following your instructions and injecting a choice brisket with the broth. That sure came out great! I’m bet the roast will too. Hope you’re well! Leaving the door just slightly open, as opposed to wide open, means that the speed of the air flowing into the firebox increases, thus adding more oxygen per time to stoke the fire. You probably knew this already just by experience but it’s just a great example of basic fluid dynamics that I teach in my classes.
I met Moe at the BBQ battle in Washington DC this summer and grabbed one of each of his rubs. If you see the pork rub I'd highly recommend it, very good stuff.

I love smoked chuck roast. I smoked a couple chuck roasts last summer and boy they came out perfect and pretty much smoked them the same way. I like making pulled beef sammy's and using the left overs as a pizza topping. Good stuff. Thanks for sharing and as always, cheers to you my friend!

Yep Oxtails used to be super cheap. Not any more. All those TV chefs "discovered" oxtails and now us regular folk have to pay extra for it. My Mom was making oxtail stew in the early 60's. Great flavor. Very inexpensive comfort food. And like any stew, even better the next day.
Oh yeah just did this the other day I got band b from academy as well best pecan wood around most pecan I got before was over seasoned but they kiln dry it and it is very very aromatic

Cold smoking works too. If you are grilling you don’t want to throw cold meat over a fire, unless you want it tough.

They had chuck roasts that big when I was a kid .49 a pound. Those were something nice. T-ROY made them great. Helluva cook.

I plan on doing this tomorrow.. Was only able to get a 3.5 lb roast (it's only for me anyways) it is a black Angus prime choice.. Not going all out for the first time doing beef.. Using WS and Harry Sow's Beef Rub on it. Love the videos and cheers brother!!!
T-roy, you do not disappoint brother! I’ve got a chuck roast I’m fixing to smoke tomorrow, first time with that, and I love the idea of putting it in the beef broth. I just so happen to have some broth after following your instructions and injecting a choice brisket with the broth. That sure came out great! I’m bet the roast will too.

Leaving the door just slightly open, as opposed to wide open, means that the speed of the air flowing into the firebox increases, thus adding more oxygen per time to stoke the fire. You probably knew this already just by experience but it’s just a great example of basic fluid dynamics that I teach in my classes.
I met Moe at the BBQ battle in Washington DC this summer and grabbed one of each of his rubs. If you see the pork rub I'd highly recommend it, very good stuff.

I love smoked chuck roast. I smoked a couple chuck roasts last summer and boy they came out perfect and pretty much smoked them the same way. I like making pulled beef sammy's and using the left overs as a pizza topping. Good stuff. Thanks for sharing and as always, cheers to you my friend!

Chuck Roast is my go-to for smoking beef. Prep, time commitment and cost make it a good alternative to brisket.

Yep Oxtails used to be super cheap. Not any more. All those TV chefs "discovered" oxtails and now us regular folk have to pay extra for it. My Mom was making oxtail stew in the early 60's. Great flavor. Very inexpensive comfort food. And like any stew, even better the next day.

Oh yeah just did this the other day I got band b from academy as well best pecan wood around most pecan I got before was over seasoned but they kiln dry it and it is very very aromatic
