Personally, I think bench seats would look better, would certainly give it more of that retro beach look I think you are envisaging in your mind... And, when it comes to the front doors... Stick with full doors. As much as you can imagine it cruising down then beach in Santa Monica or something, this is the UK. And you will maybe get lucky and be able to do full open roof a couple of times a year, IF the weather coincides with your time off... So... Keep the full doors for that extra protection. Will sill look spanking with the soft top up and around them but just make it that tiny bit more practical for those non Santa Monica beach times. Nice to see a guest appearance from Mrs. Scout 🙂
I would have thought that the weater in the UK would not have been the best for a soft top. As someone who owns a soft top landrover (perentie) in Australia the most annoying thing about a two piece doors is getting the door tops to seal against the roof. The doors are not rigid and move when closed due to the rubber piece between the door top and bottom which allows water to escape from the door top. If you go soft top id say be prepared to get water inside. Edit. i almost never remove the door tops from the bottoms as i have not found a good way to store them inside the vehicle if i need/want to put them back on quickly due to weather.
As an owner of a soft top defender, don't get the standard hood hoops, they offer no protection, get the heavy duty hoops or a heavy duty hoops with a roll bar main hoop. I fitted a military soft top hoop kit which i got second hand off ebay.

The fact the doors are in decent rust free order should not cloud your vision. They’re not gonna get slung in a skip…. Consider them as a good commodity to sell and live a new life on another defender and use the cash to fund your new project as you imagined it👍🏻
Hi Zak, if you are planning to sell any of the bits you take off, I would be interested for my 90 hardtop project. Certainly the headliner is high on my shopping list. Not sure how we would communicate with one another re the sale though, insta maybe?

Keep the full doors. They are too good to get rid of and will give your soft top a unique look.
