If you want to eliminate the burn of a jalapeno especially if you get it in eye....dab area with whatever liquid antacid you have around or go and get some. It neutralizes the acidic heat of the jalapeno immediatly. It happened to me and it works. Got it on before it migrated into my eye ball.

I think one of the first 5 videos I ever made was a version of jalapeno poppers made in a skillet, way back in 2009 or 10. This is my 4th version of a jalapeno recipe...I can't imagine a jalapeno popper I'm not going to enjoy, although I think this version might be the quickest to prepare. Thanks for watching our stuff!

I have always wrapped a whole slice of bacon around the pepper, such a better idea to lay the bacon on top! Thank you!. Definitely cream cheese and although your fingers seem to be tough there is no shame in using tongs 😁
.. I Have made them with both cream cheese only and with cheddar also ,, including bacon bits (already cooked) mixed together ,, mostly deep fried .. and breaded ....
I'm making these today! Very similar to what I usually do except I usually put the peppers in some vinegar/water that I brought to a boil, take off the heat and let them sit for 5 min or so. I like the peppers a bit cooked before stuffing. I will try charring them instead sounds great, A comment on your dairy theory - I always thought it was the fat that took away the heat - I could be wrong but one of us should GOOGLE it LOL Until then I would not recommend using skimmed milk.! Also I mix shredded cheddar with my cream cheese - I agree with camera girl.
These look amazing! Love the ingredients. As someone else suggested, try scallions instead of the tomatoes. I think I might try cutting the raw bacon into small pieces and laying them on top so when you bite into it you're not fighting with that big piece, especially if it's not super crispy. Seasonings seem good. Maybe garlic powder, pepper, fresh chopped basil? Going to buy a bag this week! 👌
Jalapeno poppers? Whoo-hoo is right! This is my kind of snack. I do have to wear gloves though cuz I'm one of the folks with sensitive skin. Wow! These poppers are a little fancy. This I gotta make. I don't do bacon so my few will be bacon free, but everyone else loves bacon so I bet these will be a big hit. I'll make some for family and some for co-workers. I remembered watching the video for the cheeseburger poppers. I'll make some of those too.
the good thing about this version is that it's easy to make some bacon-ee and some bacon-free. A commenter mentioned using prosciutto ham which I thought was a very good idea (although maybe not far enough away from bacon is you're going bacon free) ...thanks for watching!

I generally prefer smaller jalapenos, but all the ones I've seen in the store this week have been small-zucchini-sized peppers...I guess it translates into more cheese, so I shouldn't whine :^)
RE: Milk - Milk has a protein called casein that breaks down capsaicin (the stuff that makes peppers spicy), and fat that can smother the tongue's taste receptors, preventing the capsaicin from binding to them.

I tried these from a different recipe and I guess I didn't cook them long enough and everyone was afraid of them because the bacon looked under-cooked. We had to keep putting them back in the oven and taking them out and putting them in.....anyway, it kind of spoiled the majesty of the popper. THIS recipe looks relatively fool-proof and I think I might overcome my trauma and give it another go. Thanks for helping me get back on track. lol.
we've found 6 minutes under the broiler to be our magic number--of course it's gonna vary by stove and how far under the broiler you have your poppers. We've cooked them as long as 8 and 9 minutes under the broiler, which definitely makes a big difference in the crispiness of the bacon...the cooking time really is just however one prefers the bacon cooked. I like to bake the peppers first for 10-12 minutes and then take them out and stuff with a shredded chicken-cheese-seasonings
