    Thank you so much for sharing your recipe. I spent an entire day, literally from 7am-430 pm, doing the Ball method, and what a huge disappointment and waste of a day. The beans were way overcooked, but I followed the recipe to a 'T' as I always do, and then I had to babysit them for 3 1/2 hours in the oven but I had to keep stirring because they were sticking so bad! When I took them out of the PC I just knew they were going to be horrible. Very mushy texture, almost like refried beans texture. The flavor was good but definitely will never do again. I love your simple way of doing this recipe, so much easier, faster, and I won't waste a full day canning 6 pints. Thank you so much!

    I agree with you Jeni that when you can beans you then have instant meals. I can up chick peas and make hummas in minutes, it's fast food in this household :)

      I tried keeping them in the canner. Now, I prefer a different approach, as these things take up counter space, when the canner is in use. FWIW... I use small 3 drawer rolling carts (Sterilite) to store preserving tools & supplies. One is for canning supplies and accessories that fit in the drawers. Funnels, spare gaskets, metal lids, plastic jar caps, Mrs Wages items, etc. The other is for dehydrating and vacuum sealing. Jar sealer attachments, rolls for bags & pre- made bags, paper bags for powder sealing, used canning lids, and a brake bleeder if my FoodSaver fails.
      Have a niche in my kitchen where they are a good fit. While I'm sure it's not recommended, I have them stacked 2 high (omit casters for the one on top). An alternative would be to have a piece of plywood cut to fit 2 side by side carts for a place to keep pressure canners and/or a FoodSaver on top of the cart(s).

I’ve been keeping my supplies in plastic tubs, but since it’s in my living room (I’m maxed on storage places), having them in a wheeled cart is easier and more accessible since I have to stack my containers. I could even throw a cheap Dollar Tree tablecloth over it since it’s in my living room. Thanks!

    I used your method, and the Baked Beans came out AMAZING! I used my own recipe for the liquid portion, which is very similar to yours, including the clove. I add a small amount of apple cider vinegar and about a half-cup of maple syrup, as well as a bit more brown sugar and molasses. The quick-soaked beans came out perfectly. The texture is the same as my baked beans made in the oven. Whole, but tender. We are vegetarian, so I use a splash of Liquid Smoke instead of salt pork. Thanks so much for the video. This is the best way to make baked beans, period!

    Kneady Homesteader did a video on the cost effective way of doing your own bean canning vs. buying store canned beans. So the person who said it was a waste of jars... Clearly hasn't done her economic homework. Plus you can regulate what goes into your beans. Prices are climbing, not dropping; so canning your own foods is going to be a money saver in the end.

      I agree. If you can seven quarts you have seven meals in my family. Thats a monely saver because you are not cooking one quart at a time.

    I just made these the other day and they were a huge hit with my family! I canned them in half pints so they're grab and go single serve meals (with a couple of hot dogs cut up and put in there during reheating) and the texture and flavor were perfect! Thank you for this great recipe! It's always so fun to expand my canning stash with new things!

    I love the convenience of beans on the shelf.
    My kid’s favourite quick lunch is beans on toast, so I’m going to try this version. The kiddos were not a huge fan of the copycat bushs beans recipe.

    Thank u for sharing your process! I have thought about how to can my Nana's baked beans and this is the solution! I don't like the mushy cement stuff, have tried canning dried beans and have to be exact so the beans don't soak up all the liquid. This is perfect! She used to travel on Friday's on the train from Boston to our home in the north suburbs with her baked bean pot in her lap. Her recipe was similar (no mustard and just molasses, no brown sugar) and I bet these are delicioius! Thanks for taking the guesswork out of it for me! It will be convenient, and I won't have to eat a whole batch of beans by myself LOL

      It's my understanding that Boston Baked Beans have molasses. Pork and beans have tomato sauce. Maybe that's a Southern thing, as I like pork and beans! (Also like baked beans with molasses, too. )

    I tried a baked bean as a no soak and I'll never do that again. The beans were undercooked if you can believe it. I think I will give this method a try. I did make a sauce separately which I really liked so the recipe is there I just need to hammer down the technique. And it works great with pinto beans. Can't tell once it's all cooked together as you were saying.

    I love canning beans! I keep home canned beans in my pantry at all times. Never know when something is going to go sideways and you need to adjust dinner plans and fix something fast, like hot dogs and beans. Can't do that if all your beans are dry! Even cooked and frozen, you will never get that infusion of flavor like canning them in the sauce when dinner needs to be a quick fix. 😉

      Although .....I did but some really nice frozen field peas with snaps, they tasted nice and fresh and like they were just picked. I know they are not the same as canned beans, but close enough. I think they were cooked and frozen then packaged.

    My mom always made Boston Baked Bean for Easter. Was comparing recipes to my poorly written recipe I got from her over the phone. She is gone now and I would love to have some canned beans on hand for a quick side. Traditionally they take hours and hours from start to finish!

    I keep a small basket with my lifters, laddle, debubbler, I keep a little jar of vinegar. I keep any item that I use each time and just pull out the basket. Maybe something like that could help? The beans look wonderful. I am going to give this a try.

    I had the same mushy experience with beans when I first started canning. I swear it was a USDA recipe but their guidelines are far less precooking time now. This year I started canning plain beans and they are nearly the same as store bought cans

      @@carolmalko615 I have done both. Soaking overnight, fill just under 3/4 full top with water seems to be the best route

      The National Center for Home Food Preservation has 2 sets of guidelines. Canning dry peas and beans and the other is canning beans and peas in tomato or molasses sauce. The first calls for simmering beans for 30 minutes after pre-soak & drain. The second one for canning dry beans in sauce says heat them to boiling in fresh water after pre-soak & drain. I don't have any idea why one requires 30 minutes of cooking and the other does not.

    It's 102 degrees and I'm canning potato and ham soup today lol. Running the dehumidifier on high today. Trying out your recipe tomorrow, we love baked beans! I can almost smell them from here!

    you clearly are very comfortable canning. I just made the Blue Book recipe and I agree, too many onions. I did only 2. Does it matter the salt pork isn't cooked?

    Did you follow the first step for the beans in the Ball book; boiling for 2 mins and then soaking for 1 hour? I love the simplicity of your recipe and I just got navy beans. I'd love to make these!

      Yes for quick soak only, I did not cook them or bake them first.

    In the more with less cookbook she recomends canning one canner load on an as needed basis. Store the rest of dried to save space and jars. I did the ball recipe and ended up with mush following directions. Need to tweak it.

    Will you do a taste and texture test for us? Do you think the quick soak makes a big difference? I would love to "rebel" can with no soak.... just a rinse.... but only fill the jar 1/2 way up with beans. Is that being too lazy, lol? Any advice is greatly appreciated. I went to look for the link for your printable version and then I realized.... duh! it's pretty much the Ball recipe. But I don't have that book so I wrote everything down.... hope I got it all (including cloves which sounds delicious!)

      No. I do the quick soak only, then fill jars halfway with beans and add the sauce. 😊

      I JUST canned these. Jars are still bubbling!😃👍 Came to the comments to see if anyone had asked about the ketchup…lol I tasted the liquid on the fly & decided I wanted a little more brightness (acid) to balance out the molasses & brown sugar, so I made some adjustments…
      I used the recipe in this video (same as you, I doubled the beans & made 2.5x the liquid), but I also added 1 c. Heinz no sugar ketchup, 1 tsp of black pepper & 1 Tbsp of Worcestershire. Turned out amazingly good (from just tasting the sauce before canning)…& gave me enough liquid to then fill 7 quarts total…for a full canner!👍

      I canned the beans according to your Boston Baked Beans recipe and OMG! they were the best beans we have ever tasted! Although 2 of the jars didn't seal, I cooked one up for supper, delicious. I want to try baking the other jar to see how it turns out. Thank you for the recipe and assistance in my newest canning adventure!

    Jeni...could you make a flavor profile comparison of these beans to a store brand? I did a Ball recipe a few years ago and didn't care for it. So then I tried a 'better than' copy of Bush's and didn't like that either. I'd just like something similar to the basic Van de Kamps baked beans because one of our family tradition bean casseroles uses those.

      An hour, just used the “quick soak” method. 😊 You boil them for 2 minutes and soak for an hour, drain and rinse,

    You said you gave the beans a quick soak. How long is that? I'm still pretty new at canning and many other canners have said how much they like you so I'd like to know how you do it.

      The "Quick Soak" method: Rinse beans, put in a pot with enough water to cover by 2 inches, bring to a boil, boil 2 minutes, cover, turn off heat and let set 1 hour. Drain, rinse, ready to go! 😊

    Sooo...... you doubled the recipe-but not the bacon? I am looking at the exact recipe and it used 1/2 pound for 3 quarts-that is fine if it is the way you want it-I have never done beans yet and learning how much you can change something with out screwing it up or killing someone is tricky. They look great. Does the sauce get thick after it cools or does it remain thin? Do these taste smokey sweet and a little thick? That is the way I like them and with a little green pepper-or would that kill someone.

      The sauce does thicken slightly, I did not double the salt pork because I think that was a lot. They are not Smokey dice I use salt pork not bacon. Green pepper would be great in it! 😊
