Thank you for sharing your knowledge. I’m used to just buying Ezekiel bread from the freezer section but it’s $8 a loaf now! I’m desiring learning more about making my own bread without the use of modern wheat. I also recently learned about Sue Becker. She really inspired me to learn more.

I have 2 questions- I'm diabetic (type 1.5) for a yr now, and am wondering if you know if any of these grains would be more beneficial for diabetics, of course watching how much we eat? Also I've tried Quinoa before but it didn't sit well with me, hmm maybe that's bcs of diabetes before I knew it, but I'm wondering how is it best prepared to taste better?
I’m glad you found the information helpful! For diabetes, grains like quinoa, barley, and oats can be good choices in moderation, as they have a lower glycemic index. However, portion control is key. If quinoa didn’t sit well before, try rinsing it well and cooking it with broth or adding spices to enhance flavor. Sometimes soaking it beforehand can make it easier to digest too. Always monitor how different grains affect your blood sugar levels and adjust accordingly. Hope that helps! 😊

Do you have to take out the very dark pieces of grain in order to mill it???
What dark pieces are you referring to?
I buy grain and mill it as is.
Barley has gluten
I am confused why she said it is gluten free.
I even looked it up to be sure and it definitely has gluten
