There are chefs like Sam the cooking guy, who know what tastes good and know what tastes good when mixed together. They don’t come off as scientists, but more like artists, having a sort of natural understanding of flavor. This chef is something else. She not only understands flavor, she understands why things taste so good and how combining different foods will give you an even better flavor. It’s really incredible to watch and she explains it al so well. Props to an awesome video.

Adrienne...you are a culinary genius! so I am planning dinner for my wife and mother-in-law for when they get back from traveling in 4 days. I saw this video and thought... "Hmmm, I'm going to make this!" as it looks delicious! I'm talking to my wife about it and she seemed a little hesitant. So I made the salad, less the black eyed peas, and it was amazing!! I'm going to do the Black eyed peas tomorrow and buy more collard greens to go with my extra dressing. Blackened salmon is magnificent, so pairing them will make for a wonderful "Welcome Home" meal. I was born and raised in Oregon where salmon is king but I had blackened Catfish when I went down to New Orleans in the Navy and I always wanted to know IF you could blacken salmon and it would taste good. Thank you so much for this vid, next time I can afford salmon it's on my to do list.
