SPINACH PIE RECIPE:
10oz Good Feta, crumbed
2-10oz Boxes of Frozen Chopped Spinach, thawed
1 Medium Yellow Onion, finely chopped
2 Tbsp of Olive Oil
1 Small Bunch of Scallions
1/2 cup of Chopped Parsley
1/2 cup of Chopped Fresh Dill
4 Eggs
1lb Pack of Filo Dough (you need about 3/4 so about 1 1/5 packs from the 1lb box)

This looks great! If I wanted to make this for more people, could I bake it in a 9x12 rectangular dish? I don't think I would double it, maybe half it for the 9x12 dish. Thoughts??

I made this recipe and it was delicious!!! Unfortunately, I’ll have to do a better search for phyllo, but used puff pastry and luckily, it was still crispy when slicing. I will add this to my rotation at minimum, every two weeks.
The description of the dishes at the end, when you do the taste test, always gets me to the kitchen to start cooking!
I already completely understand the taste, this is one of the favorite food in my country. We also make it with meat, potatoes, mushrooms or sweet ones with apple or pumpkin

What can you do with the leftover phyllo from the package?
Throw it away
Make cheese triangles
Let the phyllo dry out. In a bowl add greek yoghurt, eggs, sugar ,lots of orange zest and vanilla (the amount will on how much leftover phyllo you have ). Put the phyllo in the bowl , mix well and bake. This is a quick portokalopita.
Bake it with cinnamon and sugar or topping for a quiche
When make the spinach pie you put the pyhol pie she twice every three times

@mimoochodom2684 can you share in which geographical location? as I have never heard of that combination, but it certainly is not used in spanakopita..
@@melid4162 Regardless of location, I have just googled umpteen spinach, cheese and nutmeg recipes. Hey if you don't want to use it, don't but it does add an extra level of flavour. I was only taking the mickey. It's also delicious without. Try it.
